How To Make Coxinha (Brazilian chicken croquettes) and Catupiry - The Best Recipe

- This coxinha recipe is very easy to make! you can find the the Catupiry recipe as well ( Brazilian creamy cheese) or you can use the Philadelphia Cream cheese if you like or just the chicken. Maybe you can make a vegetarian version with mushrooms?
You can make anyway you like, just follow my instructions on the video for all the techniques.

Coxinha recipe
Dough
1L of water
150g butter
1 Tbs salt
500g all-purpose flour
Filling
Oil to sauté
500g cooked and shredded chicken breast
1 whole garlic
1 bunch parsley
1 tsp paprika
Salt and black pepper to taste
Brazilian creamy cheese to taste, you can add cream cheese instead
To bread
1 egg
2 cups of milk
Oil (enough to deep fry)
1 cup Panko
For the Catupiry (optional)
1L whole milk
1 Tbs vinegar
2 Tbs butter
Salt 3 pinches
Dough
In a pot, add the water, salt and butter.
Once the butter is melted, add the flour (1 cup at the time) and mix well.
Remember to keep the heat of your stove medium to low.
Keep mixing until you have a smooth and silky dough. The dough is ready when it stops sticking on the bottom of the pan.
Filling
Boil and then shred the chicken.
Mince the garlic, chop the parsley.
In a large sautee pan, add 1 Tbs of canola oil, sweat the garlic.
Add the shredded chicken, add salt and black pepper.
Add the creamy cheese (cream cheese) and keep mixing until all incorporated.
Add the parsley.
Follow instructions of the video for the assembling.
Tried them in Malta once. Devised an alternate version filled with smoked cheese, finely chopped broccholi, and jalapeños. They are everybodies favourite now.

New to cooking and tried making this. Everything came out great except for the dough. Idk what I’m doing wrong it’s just so sticky and impossible to work with 😢 any tips ?

Probably you need to cook the dough longer, if get sticky in the beginning and after you continue working it in low heat, the flour will stop sticking on the pan. It is not an easy process and the dough is heavy. Try with half recipe to make it easier until you good t used to with the dough

Yes you can! Just make sure is well wrapped in plastic wrap in the fridge.
another suggestion, making with the thighs of the chicken is better, because the breast chicken is dry, while the thighs is tender and moist.
