My son on Bones and Brews BBQ does these with home made jalapeno pimento cheese topped with your meat church seasoning and a jalapeño slice. Very Very good. They have become my go to for BBQ starters
Just got done putting 4 dozen of these together for a family gathering later today. I used a cheese ball knife and a small pairing knife to stuff the "shot". Scoop a small amount with the cheese ball knife and scrape it in with the pairing knife. Worked so smooth, no mess . Gonna fire up the smoker in alittle while.

Started following the Cowboys heavy when he went there and haven't stopped. Hope to make the game this next season which I anticipate will be in Dallas. If we do, we'll see if we can stop by and say hello in the tailgate area! Really like what you do and I will definitely be trying this. Quite possibly for the Superbowl this year.

Unfortunately they are no longer in business. They called them, Angels on Horseback. A large shrimp butterflied. Place a slice of Jalapeno and Monterey Jack cheese into the butterflied area and wrap the shrimp with a half slice of bacon. Toothpick it closed and smoke on the pellet smoker, 375 degrees for 30 minutes. They will go so good with your Pig Shots.

Unfortunately I use my thick cut bacon from my deli which was about a quarter inch thick, I will use bacon from something like farmer john which is thinner and will crisp up better than my bacon. I used Johnsonville smoked brat sausage as the base and these shots were the best ever!!

I've made something like this before, but instead of beef sausage, I used li'l smokies, and I left out the filling, and instead of bacon, I wrapped them in crescent rolls, and instead of smoking them, baked them in the oven.
I do something similar, but the filling is a crushed pineapple/brown sugar/coconut rum mixture, topped with pecan pieces (called Luau Bacon Shots). This looks more tailgate friendly though (less sticky). Cheers!
I think using a piping bag (Ziploc with a corner cut off for us people who hate lots of clean up) would be easier to do than spooning that cream cheese in, wouldn't it?
Honestly I cannot say enough good things about it. With one Traeger plugged in it said it was going to run over 29 hours. It’s light, obviously makes no noise. It’s amazing for tailgating.
Love the channel but, in my experience, 350F for an hour for these is way too much... you can pretty much cook an entire chicken for an hour at 350F. These are tiny compared to a whole chicken so, unless you reduce the time or drop the temp (my preference), you're going to destroy them. I checked other recipes and they're generally calling for 250F to 275F but no more than 300F.

You will want to turn the burners on one side but cook these over the side where the burners are off (indirect).
