Chef John at Food Wishes says you can substitute Self Rising Flour if you don't have any Bisquick. And if you don't have Self Rising Flour you can make your own using the ratios of 1 cup of All Purpose Flour, 1/2 tsp salt, and 1 1/2 tsp baking powder.
That is genius! I haven't seen a tube of sausage mix in my area; however, I'm sure I could use hot Italian sausage or similar and remove it from the casing! The crispy cheddar on the bottom edge looked super tasty. Thanks for the great idea, stay safe and God bless.
Will try these on my smoker. I found putting a little Bisqick down on my board and spreading the sausage flat, layering on other ingredients and sort of making a log and the doing the mix makes it go faster and easier than in a bowl.
Looks great! Carolina Butcher shop in Angier NC has the best hot sausage for making balls. You should see about getting all your products in his shoppe!
I saw your cream cheese and rotell sausage balls. You should try that with corn bread mix and a diced jalapeño topped with your smoked queso. Amazing combination.
Still wondering lol. I just prepped these for tomorrow with a 1lb package and clearly not enough. Currently thawing out another 1lb package to see if that’s what it takes
I do similar here in Australia but I also put diced onion, capsicum (bell pepper), honey bacon hog rub, three different cheeses and instead of bisquick I put breadcrumbs and maybe an egg... make tgem about the size of a beer coaster and flatten them a little and we call them rissoles
Just another suggestion which may not matter to the most of you, but I would shred the cheese for this recipe or anything else I would use cheese in. First off most block cheese can be cheaper and will weigh more than the shredded cheese that you can purchase. Also most shredded cheeses contain other additives such as potato starch, cornstarch, powdered cellulose or natamycin. This helps it from caking together and inhibits the growth of mold. Most block cheeses will melt better and will always taste better cause it will always be more fresher.
Hey Matt, I live in Ohio. There's no Whataburger sausage around here that I've ever came across.... What would be a good substitute? Our local butchers have great salt and pepper sausage.. Or like a Bob Evan's/ Jimmy Dean breakfast sausage? Thanks
We make a variation of these and they are delish. Same recipe but use sage sausage, add extra sage and cream cheese with the sharp cheddar. You will not be sorry.
Made two batches this morning prepping for the game tomorrow. Cooked a few to try them out and while they're good, they're missing something, like a dipping sauce of some sorts... trying to figure it out now...
This may have just become my favorite video of yours yet Matt. “My balls smell good” gave me a good chuckle. Can’t wait to try this recipe 👊🏻
When he opened that beer I automatically subscribed! Nice touch to a classic with the jalapeños👍🏼
One of our favorites - just add the Jalapenos - totally worth it! And you aren't wrong, it can be a meal for sure lol
Pumping out some gold this week! I’ve had to tell my wife we’re adding something else to the party for Sunday every time I watch a video.
Mission Accomplished!
Haha I just said the same thing to my wife

Your local grocer should have Jimmy Dean sausage in a tube, usually found near the bacon. Get the hot one though.
Flexing with that Whataburger Sausage!!
Wow - that looks absolutely delicious! And I like the simplicity of the recipe!
my sister in law makes these in the oven every christmas. i can eat the whole pan myself they are so good.
How much sausage is that? My store has 1 lb rolls. That looked like more than 1 lb.
2lbs
Will try these on my smoker. I found putting a little Bisqick down on my board and spreading the sausage flat, layering on other ingredients and sort of making a log and the doing the mix makes it go faster and easier than in a bowl.
👊🏽
Now those look good with that cheese skirt!
Next time I go to church, I’m cracking open an ice cold beer too!! Love the vids, Matt!!
Everything goes good with beer buddy. Can't wait to try this recipe. Keep up the great videos!!
Made these yesterday, came out perfect, total count was about 50...too easy and too damn good! Thanks!
Love to hear it!
Looks great!

Those look incredible. As soon as this -40C weather breaks, I'm smoking up a batch of these. Great video.
“You wanna add about a tbs of Holy Cow”
Proceeds to add 2-3x the amount.
Sign me up 🤤
I slapped some raspberry jalapeno jam on them while eating. Man what good eats!
Like my stoner friends always say, you need a bigger bowl…! LOL
That’s what this Stoner says
@@stonerscravings name checks out
Definitely an all time fav as a kid growing up! and now smoked is a game changer
I love the background - praise the smoke! LOL.
Made these on the fly at home for an indoor Picnic with my daughters and wife. Fantastic.
Damn my Super Bowl menu is changing everyday. Wonder what recipe he is gonna drop tomorrow.
I saw your cream cheese and rotell sausage balls. You should try that with corn bread mix and a diced jalapeño topped with your smoked queso. Amazing combination.
Looks killer...one question though. what size package of breakfast sausage? 1 pound? that tube looked like it might be a bit bigger than that. Thanks!
Was wondering that myself
Still wondering lol. I just prepped these for tomorrow with a 1lb package and clearly not enough. Currently thawing out another 1lb package to see if that’s what it takes
I did 1-1/2 of sausage and it was binding much better
I made these and they were good..... but I reheated them the next day in an air fryer and they were amazing. A must try
I do similar here in Australia but I also put diced onion, capsicum (bell pepper), honey bacon hog rub, three different cheeses and instead of bisquick I put breadcrumbs and maybe an egg... make tgem about the size of a beer coaster and flatten them a little and we call them rissoles
Love the vids. Great tips and straight to the point. Thanks!
Wow, made them last weekend, awesome, a real hit with our neighbours

You’re absolutely right @bondjames7839 I almost always shred my own cheese because of what you mentioned here!
The meat ball looks fantastic and the beer is the ultimate kicker…. Niceeeee
Had no idea Whataburger had breakfast sausage you could buy. But I‘m in Georgia. Only one I‘ve been to is in South Alabama.
“ My Balls Smell Good “ Matt you are killing me🤣🤣🤣
What size pack of sausage?
Love your vids, not crazy about your choice of beer though. Gonna be makin' these this weekend. Texas boy! Drink Lone Star or PBR!
Love my Fort Worth craft beer. 😜
I'm sure they'd be killer coming out of a drum! DEFINITELY making these on Sunday for me and the kiddos.
it look tasty. I really want to try this one. Great vdo.
#CentralTexas in the house!! Always love your videos Matt. Gotta try these bro they look awesome!
I bet those would be incredible along side that chili recipe I watched yesterday!!!
Why do you bisquick? added flaver, texture? Cheers from Dominican Republic
Ohhhhh man!! So good ! Throw some love to San Antonio's own Pioneer Baking Mix :) #TexasStrong :)
what was the weight on the sausage meat??
You need a bigger bowl bro lol. Seriously though, love yalls stuff. Keep the videos coming!
Thinking the exact thing!
We are going to try this one out. Thanks Matt!
Looks dang good we use hot sausage to make this never tried on the grill always the oven but I must try
It takes longer to make than to eat gonna try using the smoker and the jalapeño’s I think it will be awesome
I like doing those and then tossing them with wing sauce. That little bit of heat really does make them pop.
I’ll try that!
Great looking recipe !!!!
Oh HELL yea! Adding the chopped japalenos and I won’t be stuffing the peppers this time. It will all be in the ball. Perfect.
Full Send on that! Nice work
I am so making this. Have you tried with ground beef?
Going to have to find the whataburger sausage here in East Texas.
Some HEB has them. Also, try HEB brand original sausage. They taste pretty similar.
These are fantastic!
i watched the video and love it but i have a question: "tube" of sausage, what is the weight of the tube?
A dipping marinade barbecue sauce your favorite choice with honey mixed in joy .
think I could ball them up and freeze them raw for a bit? So I can bring to a tailgate a few days later
Looks awesome! I will be making these!!
Hey Matt, I live in Ohio. There's no Whataburger sausage around here that I've ever came across.... What would be a good substitute? Our local butchers have great salt and pepper sausage.. Or like a Bob Evan's/ Jimmy Dean breakfast sausage? Thanks
I just use Jimmy Deans
Great video! Love the beer at the end.
perfect breakfast food!!!
@meatchurchbbq Do you have to use Bestquick or will any pancake mix do? Such as Kodiak or other types.
🔥🔥🔥
@meatchurchbbq Could these be prepped the night before and then smoked the next morning prior to heading to the tailgate?
Can’t wait for Sunday!!
A good dip'n sauce for sausage balls is 50/50 mayo and mustard. CHEERS!
We make a variation of these and they are delish. Same recipe but use sage sausage, add extra sage and cream cheese with the sharp cheddar. You will not be sorry.
Dude. Best video yet. I can't wait to do these this weekend. "Man, my balls smell good." HAAAAAAAAAAA!
👊🏽
Amazing. You are the man.
Is there a better unit of measurement than a tub of sausage? They come in varying sizes..
I think he used a 1 pound tube of breakfast sausage-I used Jimmy Dean’s regular
What is the point of the Bisquick? Seems like you could do them without?
Holy hell I'm using this recipe for sure
Cheers! 🍻
I didn't see any smoke rolling. Are we relying on the pit being seasoned or are we smoking them out??
Timberline runs a clean fire. Thin blue smoke. The best.
my mouth is watering
have u tried to smoke them first them grill
Do you dice the jalapenos with whole or do you clean them out first?
Cleaned the veins to remove some heat but that’s your preference.
Should have used whataburger pancake mix too, haha
I bet an orange marmalade sauce would go good with that. Sort of sweet/spicy flavor.
I have an electric smoker that tops out at 250 degrees. I wonder if that would work as well.
Matt: Just gonna add a tbsp. of holy cow
*dumps in half the bottle*
I’m heavy handed 😂
:D
How does anyone NOT like this video? 🤔🤔🤔
Haters
the life of RUclips 🤦🏽♂️
Can these be made the day before of will the cheese get soggy?
Skip the jalapeno......use some roasted hot green chiles:-)
Love it - keep em comin!
Made two batches this morning prepping for the game tomorrow. Cooked a few to try them out and while they're good, they're missing something, like a dipping sauce of some sorts... trying to figure it out now...
Sausage gravy is the sauce you're looking for.
Mikes hot or spicy honey for the win
Could you do these at like 225 if you had other things in the smoker? Obviously more time but would it effect the outcome
Clayton how did it turn out at 225 and how long it take
What is the conversion to pounds of one tube?
1 lb
Yeah BUDDY! Top off with Cayenne Chili powder Or Siracha, BOOM!
I’m going to stuff this in a jalapeño and wrap in bacon!
Could you use Krusteaz pancake mix in place of the bisquick pancake and baking mix?
Yes
I added another 1/2 tube of sausage and the binding seemed much better
Prefect for Super Bowl
I can’t believe you just said that!
I don't do football but the sausage balls are getting made this weekend.
I was all on board til bro brought out the light beer
"What these pair perfect with" I mean I was thinking a spicy ketchup or hot honey but Miller Lite works just as well.
I bet they'd be good with a beer!
What about making these with ground beef?
Are you kidding me...”my balls smell good.” Lol. Thanks for the cooking video.
