I'd say that the only thing to change about this is that you absolutely MUST wrap the sandwich in foil or parchment before cutting. This steams the bun a bit and allows all the ingredients to congeal making it easier to eat!

Yesss! I don't really get these super complex and time intensive fast food recipes. Sometimes a burger just needs beef, cheese and a bun and that's the beauty of it. Why spend time and money doing it with Wagyu, fifteen different condiments, slow cooked onions and all that other complicated stuff that would better serve a different dish?

Im sorry Andrew but you forgot the last one but crucial step: wraping your chopped cheese into aluminum foil and letting it rest. The only way to recreate the takeout-y, soft, steamed bun texture!

This, here. I was expecting it to be wrapped and was disappointed at the end. It is a MUST. Not only for the reasons given above, but it is also how one is able to contain all the ingredients and prevent spillage. Babs, come on, man. You should know better.

hey babish, tip with the packing of sandwiches, even for making them at home, wrap them up before cutting, the wrapping, gives a tight structure to the sandwich that the bread alone cant offer, it keeps it together for that lovely cross section, and when you go to eat it all you have to do is peel it back and enjoy. theres a reason every sandwich place does it.
I literally watched the Egg Sandwich episode before this where he did exactly that and wondered the same thing.

definitely do this. I started wrapping mine in tinfoil after watching j kenji lopez-alt's chopped cheese video. in addition to the foil itself providing structural integrity and making it way easier to get all the overflowing beef and lettuce into the thing, just the process of having the whole thing wrapped up into a tube makes the bread sort of mold around the fillings and even after you peel off the foil the whole thing holds together much much better and is just way better to eat.

I feel like this was some sort of "Are cheeseburgers sandwiches?" debate that someone took too seriously.

A cheeseburger is one of the sandwichiest sandwiches that ever sandwiched.
That was resolved by simply chopping up the cheese burger patties and serving them up in a sub roll, instead of a burger bun.
TBH, it was most likely first made by some street food vendor, who was just having a "bad day" at work. He probably found that the cheese burger patties, where sticking badly to the gridle and breaking up, along with finding out that he was out of burger buns and only had hotdog buns still left.
According to the cube rule, a regular cheeseburger is a sandwich but a chopped cheese would be a taco

Hmm, I've talked to a lot of NYers about the Chopped Cheese, and overwhelmingly it is agreed that using frozen (or previously frozen) beef patties is critical to an authentic Chopped Cheese.

Only similarities between the two is the fact they got meat cheese nd vegetables the prep process to the cuts of meat to the seasoning to even how the vegetables are cooked and what vegetables are put makes all the difference when it comes to a sandwich.

Just had to make a post for the purpose of thanking you for including the spices used. I had been adding dried basil as well as the other ingredients(it certainly didn’t hurt the meal). Why? This is literally just a burger on long bread. My family has been making these for over half a century in Montana. New York is not special, never has been.
Pro-tip: Wrap it is parchment or foil for about 3-5 minutes and let the steam do it's magic. Thats how you get that authentic "I got you a chop cheese while I was there" texture.

I am not ashamed to say that ever since I saw the episode it has become a staple in my kitchen. Easy to make and delicious to eat.
Fell in love after watching other vids on the chopped cheese. One often excluded tip is to wrap them in parchment paper, and foil afterwards, even at home. The meat will steam the bread from the inside out, and pulls in the bodega feel lol
As a Californian that has never heard of chopped cheese I was like this is a long video for "take knife, chop cheese".

New Yorker here! It seems simple but it’s actually quite delicious. If you ever find yourself in NYC, go to the north of Manhattan in Harlem and get one.

I made a chop cheese earlier this week but I used kabob meat that was spiced with garlic , cumin , cilantro and onions. It was fantastic highly recommend.

I WAS WAITING FOR THIS!!!! A couple of months ago I was in NYC and I had a chopped cheese from Hajjis (obviously) and it was AMAZING
Excellent job. The one thing I would add is wrap your chopped cheese and let sit for a few minutes so it gets that Bodega feel. The way it kinda steams in the wrapping as you walk to your apt or down the street. Or on the train or bus. It really adds to it.
I got this regularly when I lived at 1199 Housing Corp. Blue Sky Deli(hajji’s) was across the street. Carlos aka "Carlito's Way"(RIP) invented the sandwich.
One thing you should have done is wrapped it up though- it’s an underrated part of any hot sandwich, where it kinda of steams and lets “the flavors get to know each other”.
I usually get the green peppers but no ketchup... I've also tried it with mayo/honey mustard combo... and ive added bacon before (thats an experience)... my normal tho is everything on it, no ketchup, just mayo, with green peppers too... most places i've gotten it, in Brooklyn at least has had green peppers on it without me asking
Here’s a useful way to make the sandwich.
Once the cheese is melted, stack the tomato and lettuce on the meat and cheese pile on the grill.
The roll should be split, but make sure it doesn’t break in 2. Add your condiments to the bread.
Put the split roll on the top of the stack, run the spatula under everything, and flip it over.
Everything should now be in the roll. Just fold it shut.

I'm from the Midwest, and I still make mine with peppers, just because that's how you get them around here. Now I know better, but my wife likes them with the peppers, so I can't stop.

My local deli put a spin on it and i highly recommend it, add pickled jalapenos and cherry peppers then switch the cheese to monterey jack or pepperjack it's amazing if you like spice
You should have gotten the demo chopped cheese from the original spot - Hajji's deli on 1st avenue and 110th st. They use a panini press on the sandwich, it really makes it more dense and helps all the flavors "get to know each other."
My favorite local Shwarma shop does the same thing, it's a great extra touch.

I made this with normal sliced bread because I didn't have the rolls on hand, and it was so delicious I can't describe! I need to now make the bread.

There is/was a place around Jacksonville, FL called Larry's Giant Subs that made something similar called The Roethlis-burger (so named after the same Pittsburgh Steelers QB because it was allegedly based on his favorite sandwich) and that thing was to die for. I hope to make one of those chopped cheeses one day and do this recipe proud.

bread tastes different in the NY metro area ; SF is close , but ill forever back the viewpoint that no one makes bread like NY

I mean I've tasted some great bread too, never been to new York but my parents lived there for like a year and they never mentioned anything special about the food
