Hi Maangchi, Your new hair style looks just great! I made a version of this today using dried apricots. They were small so I used half the walnut only instead of stacking two halves. I put dried sweetened cranberries along the row of walnut halves. They were so pretty! And delicious too.
Yes, my parents were Lecturers at the 삼육대학교 when I was between 9-14~! I really loved Korean Food and culture! (I also learned how to speak Korean there!)

Oh, My! In my country we make candies - chocolate dipped, dried apricots stuffed with walnut! I love persimmons. Have a box of fresh ones. Need to figure out what to do with them, since they start to ripen all at once.
Love these gotgamssam, they look so beautiful. And HEALTHY! I never see dried persimmons here in the West where I live. BUT, I have a persimmon tree. I wonder how one dries them. I set them on my windowsill to ripen and then just freeze the pulp for baking. Yum.
Wrap the apricots with proshuto ham and top with a dab of soft goat cheese and you'll have a platter fit for kings. A little wine and you'll be set! I can't wait to try this out with my uncle and his... How to put it? High class friends over over the holidays!

All the ingredients are in my freezer (like the sliced pork belly which I bought from the Korean supermarket nearby) Also, I learnt so many new methods of cooking from you, like boiling the vegetables and then giving them bath in cold water! so green - Just like you said. The persimmons must be too dry. Add some honey inside the gotgam to make it sticky before rolling. Choose softer gotgam. : )
