Thank you for the great recipe. Made this soup twice and both times on the stove. Used avocado oil, 2 inch ginger, 4 garlic cloves, and some add ons such as: 1tsp oregano, half tsp turmeric, quarter tsp cumin powder and half tsp cayenne pepper. Also added 1 medium potato along with 4 cashews for the creaminess. This recipe is a keeper.
I made this for my mother and she loved it. I added half a teaspoon of cinnamon and didny have any of that cream she had so i mixed french vannilla yogurt with sour cream and it complimented very well
I made this last night, and tried to share it on Instagram, but couldn’t figure it out. lmao, I don’t post much on Insta. Also, I made homemade soy milk yogurt, and used some turmeric in the soup, and added a pinch of cilatro on top, wow, it was so good. Thanks for this recipe! Your instructions were simple😊
that was really delicious! I didn't add the apple cider vinegar because I forgot to buy it (I never use that anyway). I added 1 tsp of both cumin and corriander and what a difference those spices made to the soup! Next time I will try to roast the carrots (my oven was being used tonight). This recipe really is a keeper!! I made sure to share it. :)

I must say, the variations and other information is very helpful. I'm glad I found your RUclips channel. Looking forward to the next recipe. Paul and Charity.
This looks very delicious and I am going to make it tomorrow. I think both ginger and garlic should be chopped not grated so you can caramelize them a bit. The mixed peppercorns contain red ones from the California Pepper Tree (which is native to Peru and Brazil called Schinus Molle), which grows everywhere in California. Just pick them and dry them in the oven after washing. Yum. It is not a true pepper but adds piquancy. An exotic spice you can add in there - either Sichuan pepper (ground), or Nutmeg - just a dash. Another option is ground fresh fennel seed and a pinch of coriander powder. The addition of Creme Fraiche is a very good idea. It should add a tart flavor and creaminess. Also the pumpkin seeds. Thank you! Lovely recipe. The ginger and carrot too are very energizing. This soup gives you energy. fyi- Please don't wear jewelry on your hands when cooking. Im making in my slow cooker with sake tequila and soysauce roasted corn and maybe some coconut creme instead of creme fresh because its not cruel to animals
Way too much pepper I think I would’ve added a half a teaspoon to the whole batch not a whole teaspoon made it really hot and spicy other than that it’s a good soup
Way too much pepper for me made it too hot and spicy I would’ve just used a total of 1/2 teaspoon pepper that’s a lot of work to make it turn into a very spicy hot soup not what I’m looking for in a carrot soup. Other than that the recipe is very good just a warning that’s a lot of pepper

I am thrilled to hear that you liked this recipe. Thanks for coming by and taking the time to leave a review.
I made this and really enjoyed it. I didn’t have any crème fresche so I used a dollop of sour cream and it was still delicious!
This is absolutely delicious! Roasting the carrots makes it sooo much more flavorful.
This is music to my ears. So happy to hear that you liked it Sarah. Can't agree more with you.

I’m very excited to make this recipe friday!! Looks delicious!!
@Conor Nelson no one gives a shit.
I made the soup and kept it simple without bouillon or creame and it was still so yummy.
So beautiful....and healthy!
It is delicious :)

This is a new, dish to me
It looks great thank you 👍
I love this soup
Thanks for the recipe. Delicious! I made a small change by using leeks instead of onions.
Leeks are very good in celery and potato soups.
Very nice.
Looks delicious!
Thank you Shalini! I am happy to hear that you liked it.
This soup looks so colorful and delicious. Healthy recipe ( carrot and Garlic). Thank you!
Looks great! Vegetable oil is super bad for you. But, looking forward to swapping for olive oil and trying the recipe!
So agree!!!
Awesome! Thanks
Can you freeze this and make ahead?

Yummmmmmm
You should put the carrots into a bowl to toss, and then pour on the roasting pan
I realised this as I tried to do it on the pan and it was such a pain in the rear to do!
I'll be mixing in a bowl next time!
What can we do if we do not have an immersion blender?
Put it in a blender but be careful because the soup is gonna be really hot! :)
Did you use apple cider vinegar in the roasted carrots soup??
What does apple cider do..?
How much ginger?
Would you add a potato 🥔 too? Thanks x
Yes you can! I would start with a small one though.
How many servings would you say this makes?
About 6
Lemongrass is good in this.
Why you use vegetable oil and not olivenolje
Can I use something other then vegetable broth?
You can use water or chicken stock if you want.
What to do if you don't have the blender.i have one for snoothies
You can use the one you use for smoothies. It would work but you'd have to do it in small batches. Hope this helps.

Roasting carrots as well as any vegetables that have a high sugar content.
Is your comment a question or an instruction?

If the carrots are organic, you NEVER peel them because peeling is the fiber which we need. If you peel
Why add salt and pepper on the carrots when you add it when the liquid is added ? And add GARLIC GARLIC AND MORE GARLIC ! I may add celery ?
It’s called seasoning all the way.

you think 1/2 a teaspoon of black pepper is spicy?💀😭
I’ve put mine on 425 for 30 minutes & my pan came out burned.

Why use vegetable oil?
It’s horrible for you!!
Please use olive oil or avocado oil or even coconut oil if you love coconut.
This was insanely too much ginger for me.
Thanks for your feedback. The good thing is that you can always adjust the amount you use.
What is vegetable broth?😂
Hi. Just a friendly note, all of your vitamins and nutrients in the carrots are in the skin you stripped off :)
