    INGREDIENTS
    1 piece skin on chicken breast
    2 pieces skin on thighs
    12 gizzards + 1 clove garlic, prepared
    lime to taste
    2 tablespoons toasted rice powder
    1 inch galangal, finely minced
    dried crushed chilies to taste
    1 & 1/2 tablespoon fish sauce
    6 kaffir lime leaves, finely sliced
    2 inch stalk lemongrass, finely sliced
    1 shallot, finely sliced
    optional to add long beans, thinly sliced (i added 4 beans)
    fresh thai chilies to taste, thinly sliced
    2 stalks green onion, thinly sliced
    2 tablespoons padaek
    palmful cilantro or sawtooth cilantro and mint, chopped
    top with crispy chicken skin!

    Finally an authentic Lao laab gai video... it’s not authentic if you don’t use galangal and gizzards haha! My family adds fermented fish sauce which makes it good too, but that’s optional.

      but what if you don't like galangal and gizzards? i think you can make it with whatever you want! i'm not here to be authentic or legit, just sharing delicious food for everyone to make it the way they want to at home :)

    No MSG? My seasoning is pretty much on point to what you use as well with the only difference of MSG and I’ve never used lime leaves before so I’m going to try that out. Great video!

    nice recipe ..Just my observation ... It seems like you are using the same cutting board for raw and cooked food.... not sure if it's a good idea, I always have separate cutting board for raw and cooked food

      no worries. I prep my ingredients (from cooked to raw) on my cutting board and wash in-between takes :)

      yes you can. I would start with half the recommended amount and adjust the seasoning from there :)

    I don’t know what Lao or Thai you from, I’m pretty sure that’s not laab gai but the goi gai sure does looks yummy though

      My dream knife would be anything Bob Kramer, but a nice Wustoff or a J A Henkel chef knife would be nice too. American Test kitchen says a Victornoix Swiss knife is very good too.
