I think your definition of goi and laab is pretty accurate...and I think it is also which region of Laos you're from too. My family is from Pakse and all the "laab" that I see people post is to consider "goi" to us. I love goi het too!!
I don't know specific brands bc I purchase them from the Thai markets or my aunt makes them for me in large batches but I would try the Thai markets. They're labeled as roasted/toasted rice powder in the spice section :)
Looks yummy! I guess by using king OYSTER mushrooms, you had confused yourself and called the dish goi hoy instead of goi het. Ha ha...but I did see that you corrected yourself in the description box. By the way, the terms goi and laab confuse me as well. Now I just use the term laab for the Lao pork, beef and chicken meat salads and goi with the seafood and veggie versions. I’m most likely wrong but it makes life easier :P
Mushrooms have a good texture and the scent of fresh herbs has a refreshing and spicy salad! Perfect for summer!

You should try this dish with Matsutake mushrooms...aka Pine mushrooms the aroma is intoxicating.. you can only get them during the fall season

my family has always referred to goi as the “cooked” & dryer version. laab for the raw meat with more liquid in the salads.
