    the boiling and ice water is called Shocking, I do it with fresh peas too, preserves brilliant taste and color, and they don't turn to mush in my fried rice. I love this recipe! gotta try it, thank you!

    Every ceviche ive ever had were left in the acid ir some sort of liquid.
    And i was born and raised rite by the Mexican border

    Reminds me of the mango corn salsa I used to eat when I worked in Miami, FL. I am going to try this as I don’t think I have ever had Ceviche. The watermelon radishes are beautiful.

    I love ceviche!!! Your recipe looks very yummy, even though i have never seen those watermelon radishes (i don't like radishes and avocados) the combination of mango and pepitas sound good.

      It is not like the Mexican ceviche I am used to either. Usually it is doused with tomato juice. So many different ways to make ceviche.

    Jalapeño seeds are very strong and if you want the kick put them, but remember you can get the kick when you chew one. Otherwise you can separate them and blend them making an spicy sauce, that I do and love it

    Jalapeño seeds have ALL nutrients and antioxidants = hotness. It is a myth they are bad. They are only "bad" when you can not stand the hotness or you hate healthy eating. Love your channel. P.s: I was born Mexican and ceviche is one of my favorite Mexican dishes, yours looks SO AWESOME!! I would only leave the chile seeds. :)

      A, Martinez--It's from the FIRST Crocodile Dundee movie. He's about to get mugged by a knife-wielding ne'er-do-well. His date is frozen in fear and says that the assailant has a knife. Dundee pulls out his huge out-back blade and says the classic line: "Nah. That's not a knife. THIS is a knife." One of my all-time favorite movie lines!

    Most of the spice from a chili pepper comes from the seeds, and a little more from the veins. Here in Mexico most salsas have the seeds , but we like and tolerate spicier food. An urban legend says that the seeds can give you appendicitis but although thats possible its too rare to worry about eating a seed or two.

    Roll your limes on cutting Board if they are “tight” it loosens up membranes and make it juicy.

    Seeds can get stuck in the Intestines causing growth and sickness. I personally never had a problem eating the jalapeño seeds. It actually makes the dish spicier.

    You can use a vegetable peeler on the mango then use your knife to cut and dice. It's cleaner and easier, you won't bruise or mush the mango.

    The seeds have most of the heat. A lot of people remove all or some of them to control the heat in the rest of the dish. If you eat too much of them it can irritate your tummy but that also depends how sensitive your system is to spice.

    I always thought that you take out the jalapeno seeds because they just make things "too spicy". I have left some seeds in Jalapeno poppers because I like the extra heat but idk. Also, thank you for the Crocodile Dundee reference.

    I love your videos. You haves great camera presence and a great upbeat personality but sometimes... you don't get it right. Shrimp sushi is always cooked. The shrimp is always the pink that shrimp turns when cooked. If anyone has had brown shrimp sushi please let me know. Also most ingredients in sushi rolls are also cooked. Believe it or not raw crab isn't pink and white either. So, no, not all sushi is raw. ❤🌅🌵

    Old bartender trick for tough limes, lemons, or oranges...roll the fruit on a hard surface until you can feel the juice loosen, then juice.

    Limes are ridiculously expensive where I live, all year long :(. Since using juice-in-a-jar is a no no, would it work to use all lemons and oranges instead?

    Looks delicious although seems like an Americanized civeche salad. My family is from Sinaloa and I’ve seen it usually in a Clamato bath with lime juices.

    Jalapeño seeds and veins are the heat. I always remove, put aside, mince veins and then add seeds and minced veins to taste.
