Crust
Pan size: 6”/15cm
70g graham crackers
30g (2 tbsp. + ½ tsp.) butter, melted
Cheesecake Filling
6g (3 tea bags) earl grey tea
30g (2½ tbsp.) sugar
80g (⅓ cup) hot cream
370g (1½ 8 oz. blocks) cream cheese, softened
70g (⅓ cup) sugar
pinch of salt
5g (1 tsp.) vanilla
80g (⅓ cup) plain yogurt
2 large eggs
10g (1⅓ tbsp.) cornstarch
Candied Lemon
1 lemon
180g (¾ cup) water
150g (¾ cup) sugar
Lemon Whipped Cream
150g (½ cup + 2 tbsp.) cream
1 tsp. lemon zest
3g (½ tsp.) vanilla
40g lemon syrup (from candied lemon)
Garnish
lemon balm or mint leaves

I just made this cheesecake, i didn't have cornstarch so i used all purporse flour. Absolutely delicious & decadent
