I made this last night. My mom was like 'it looks like a lot of chopping, I'll help u out' and so it was a great bonding experience with her. We laughed over the oddly cut potatoes to her persisting me in using up that miso sauce after this recipe. It turned out wonderfully and I took it to school for lunch this past week. Thanks for bringing us closer through this recipe ♥️

hahaha, Minnesota girl here :) and yes, it is a staple. Although I've never heard of putting potatoes inside. The biggest "argument" around here is whether it has green beans, corn, or both on the inside. And interesting technique on spacing out the tots on the top; our philosophy is to cram as many as possible on the top (you don't want to be able to see the filling underneath). Hope you enjoyed it!

I say more is more so put ‘me both in! lol Also I’ve seen a lot of people do it that way too, putting a bunch of tots on top with no space. Both methods work well but I think having a little space in between gives the tater tots an opportunity to crisp up a bit more and the contrast in texture between the creamy inside and slightly crispy outside is 👌👌👌 Totally up to you though! As my friend Nisha says: you measure that with your heart!! ❤️❤️🥔🥔😂😂
My husband introduced me to tater tot casserole. A friend at work made it. So he got the recipe. This was before I was vegan. He made it with ground turkey. But then when I became vegetarian he made it with Morningstar crumbles. I will definitely try it this way thanks Nikki.
My grandma is from Minnesota and we grew up always having grandma over to make tater tot hot dish and pies, but the non-vegan version. Thank you for veganizing this!! I cannot wait to try it!! And you made it as authentic as my grandma would have with all the key ingredients! Excellent job!

Looks really good. I love that you made the base and that it was so easy. My recipe isn't really regional per se, just a family tradition. My mom use to make potato, corn sausage skillets. I've been a vegan for a long time now. I start with a hot cast iron pan, sautee some white onion and garlic until translucent, add thinly sliced potato and brown them slightly, add sliced beyond beef spicey italian sausage 'coins' and corn, cook until browned. Season with black pepper and smoked sea salt.

My grandmother used to make Tater Tot Casserole (in Indiana we say 'casserole' instead of 'hot dish'; I don't know why). It was basically ground beef, cream of mushroom soup, and tater tots completely covering the surface. Now that I am vegan I have been trying different recipes and I am adding yours to the list. Tater tot casserole is one of my boyfriend's FAVORITE foods from his childhood (We're from Wisconsin...) and tomorrow happens to be his birthday! @@NikkiVegan it's been great! There's a few times Ive eaten things that are non vegan but all and it's been great. I thought it would be hard to give up meat but it hasn't. I haven't tried tofu yet, just legumes and vegetables. I feel healthier

I remember feeling so good after first going vegan too and being surprised how much easier it was than I thought it would be ☺️ tofu has become one of my FAVORITE foods but it took me a while to figure out a few different ways to make it that I liked! There are honestly so many delicious ways so keep at it until you find a few that you like. One of my favorites is my tofu ricotta stuffed shells! If you haven’t tried that recipe, ira a goodie 💚 Hope you love it!

I grew up in WA state and I grew up with a similar version of this dish ours had cheddar cheese, mushroom soup, ground beef and tater tots my mom occasionally added corn or green beans. We called it Tater tot Casserole back then. Now I call it gut bomb but I will happily try out the vegan version. I am wondering if the similarities of this dish are because both states have large Norwegian populations? My mom's dad is Norwegian.
Okay this looks SO GOOD. also, I have a dish from my hometown that I’ve veganized! I’m from Cincinnati and Skyline Chili is a really big deal there and there’s a dish called Skyline Dip, it’s basically a layer of cream cheese, a layer of skyline chili and then a layer of shredded cheese and you bake it until it’s melted and eat it with tortilla chips and it’s SO GOOD. To make it vegan I just use vegan cream cheese and vegan shredded cheese (I love Vio Life) and then I use beyond meat and mix it with the skyline chili seasoning packet but it’s SOOOO GOOD YOU GUYS 🤤🖤

I'll have to try this version. I came up with a tomato based tater tot casserole. Instead of white sauce, I use spaghetti sauce. I also skip the potatoes and add celery.

Oh my gosh my mom used to make tater tot casserole all the time!!! Ugh I’m so excited! My boyfriend will totally love this too. 😁 I grew up in West Virginia. I was never into it but I know a lot of West Virginians love pepperoni rolls but I didn’t really like pork before I went vegetarian/vegan anyway. We did eat a lot of chili, cornbread, and tons of fruit jams and butters 😁🌱

I would like to add lentils instead of beef crumbles, my question is do you think I should par boil the lentils and then add them to the cassarole or add uncooked lentils to the casserole while adding more water/ broth? I just don't want the lentils to soak up all the juice of the casserole leaving it dry. Any suggestions? 😊
This looks delicious. The only thing I'm wondering is about the beef less crumbles. There is only one brand where I live and after eating it for over 15 years I am SICK of it. Would something like beyond burger/lightlife fresh ground work? I'm probably going to try it with lentils as you suggested but wondered how that would work. NikkiVegan I used almond milk soup base and thickened that and then just used gardein crumbles, corn, and lots of tater tots, and of course served with ketchup on top!
Thoughts on using the hot italian beyond sausage (remove "casing" first) instead of the vegan ground beef and adjusting seasonings accordingly? I have some in my freezer I'm considering using in this recipe!
The nice thing about hot dishes are you can make them your own. Most of the time they were for cleaning out the frig or stretching a little meat to feed a family, obviously no meat here but you can catch my drift. I'm thinking hot sausage sounds great! Everyone is the midwest seems to have a family hot dish or casserole!
I think it’s funny you mention people who don’t like carrots (I legit thought my sister and I were the only ones) as I loathe raw or boiled carrots but roasted they are sooo goooood.
Haha I think all vegetables can be delicious, it just depends on how they’re seasoned, cooked, and also for how long! Think mushy, boiled, overcooked, salt-less Brussel sprouts vs crispy oven roasted Brussels sprinkled with vegan parm and red pepper flakes and finished with a bit of lemon zest! Both are easy, but one is in a league of its own ☺️🤓

I know EXACTLY how you feel because I used to feel the same way! But honestly, miso is a game changer. Truly. And a tub of it lasts forever! I’ve had the 7 dollar chickpea miso I use for nearly a year and it’s so worth it (the cost per use is really low because it’s fermented and lasts for a very long time) If you haven’t seen my Pasta E Fagioli recipe video, I recommend checking it out because I go into more detail about building + layering flavor. Basically miso adds a rich, savory, umami quality that really makes a difference in my opinion. But not all miso is the same. Some are wayyyy saltier and more intense than others so I linked the one I used for this in the blog post to make it easy ☺️ You can do this without the miso though, but you will need to adjust the seasonings and maybe find another way to add depth of flavor like with soy sauce or maybe even mustard. Hope that helps! 💚

I discovered an IG account from Rhian Hy a few months ago, One Arab Vegan. I was intrigued as I grew up with Middle Eastern food. Particularly a recipe on her blog for baked kibbeh (cracked wheat, meat, and spices) which is traditional made with lamb. She used pumpkin in place of the meat. I was pleasantly surprised at how similar the taste was. I would love if you tried a version of your own and shared! :)

I’m from Minnesota and my Dad made, and still makes this a few times a month. He uses ground beef, hot dogs, cheddar cheese, cream of mushroom soup, a few bags of mixed veggies. Your looks much more compassionate!

@@NikkiVegan it's been great! There's a few times Ive eaten things that are non vegan but all and it's been great. I thought it would be hard to give up meat but it hasn't. I haven't tried tofu yet, just legumes and vegetables. I feel healthier

I remember feeling so good after first going vegan too and being surprised how much easier it was than I thought it would be ☺️ tofu has become one of my FAVORITE foods but it took me a while to figure out a few different ways to make it that I liked! There are honestly so many delicious ways so keep at it until you find a few that you like. One of my favorites is my tofu ricotta stuffed shells! If you haven’t tried that recipe, ira a goodie 💚 Hope you love it!

I grew up in WA state and I grew up with a similar version of this dish ours had cheddar cheese, mushroom soup, ground beef and tater tots my mom occasionally added corn or green beans. We called it Tater tot Casserole back then. Now I call it gut bomb but I will happily try out the vegan version. I am wondering if the similarities of this dish are because both states have large Norwegian populations? My mom's dad is Norwegian.

Okay this looks SO GOOD. also, I have a dish from my hometown that I’ve veganized! I’m from Cincinnati and Skyline Chili is a really big deal there and there’s a dish called Skyline Dip, it’s basically a layer of cream cheese, a layer of skyline chili and then a layer of shredded cheese and you bake it until it’s melted and eat it with tortilla chips and it’s SO GOOD. To make it vegan I just use vegan cream cheese and vegan shredded cheese (I love Vio Life) and then I use beyond meat and mix it with the skyline chili seasoning packet but it’s SOOOO GOOD YOU GUYS 🤤🖤

I'll have to try this version. I came up with a tomato based tater tot casserole. Instead of white sauce, I use spaghetti sauce. I also skip the potatoes and add celery.

Oh my gosh my mom used to make tater tot casserole all the time!!! Ugh I’m so excited! My boyfriend will totally love this too. 😁 I grew up in West Virginia. I was never into it but I know a lot of West Virginians love pepperoni rolls but I didn’t really like pork before I went vegetarian/vegan anyway. We did eat a lot of chili, cornbread, and tons of fruit jams and butters 😁🌱

I would like to add lentils instead of beef crumbles, my question is do you think I should par boil the lentils and then add them to the cassarole or add uncooked lentils to the casserole while adding more water/ broth? I just don't want the lentils to soak up all the juice of the casserole leaving it dry. Any suggestions? 😊

This looks delicious. The only thing I'm wondering is about the beef less crumbles. There is only one brand where I live and after eating it for over 15 years I am SICK of it. Would something like beyond burger/lightlife fresh ground work? I'm probably going to try it with lentils as you suggested but wondered how that would work. Also, in your videos could you please mention what size of pan/dish you are using? I'm terrible at guessing. Thanks for the recipe!

NikkiVegan I used almond milk soup base and thickened that and then just used gardein crumbles, corn, and lots of tater tots, and of course served with ketchup on top!
Thoughts on using the hot italian beyond sausage (remove "casing" first) instead of the vegan ground beef and adjusting seasonings accordingly? I have some in my freezer I'm considering using in this recipe!
The nice thing about hot dishes are you can make them your own. Most of the time they were for cleaning out the frig or stretching a little meat to feed a family, obviously no meat here but you can catch my drift. I'm thinking hot sausage sounds great! Everyone is the midwest seems to have a family hot dish or casserole!

I think it’s funny you mention people who don’t like carrots (I legit thought my sister and I were the only ones) as I loathe raw or boiled carrots but roasted they are sooo goooood.
Haha I think all vegetables can be delicious, it just depends on how they’re seasoned, cooked, and also for how long! Think mushy, boiled, overcooked, salt-less Brussel sprouts vs crispy oven roasted Brussels sprinkled with vegan parm and red pepper flakes and finished with a bit of lemon zest! Both are easy, but one is in a league of its own ☺️🤓

Hi Nikki. I have a question. Do I really need the Miso? There is just something about that ingredient that bugs me. Whenever I see it in recipes I just don't make that dish. Miso would be a waste for me to buy. Thanks, Donna
I know EXACTLY how you feel because I used to feel the same way! But honestly, miso is a game changer. Truly. And a tub of it lasts forever! I’ve had the 7 dollar chickpea miso I use for nearly a year and it’s so worth it (the cost per use is really low because it’s fermented and lasts for a very long time) If you haven’t seen my Pasta E Fagioli recipe video, I recommend checking it out because I go into more detail about building + layering flavor. Basically miso adds a rich, savory, umami quality that really makes a difference in my opinion. But not all miso is the same. Some are wayyyy saltier and more intense than others so I linked the one I used for this in the blog post to make it easy ☺️ You can do this without the miso though, but you will need to adjust the seasonings and maybe find another way to add depth of flavor like with soy sauce or maybe even mustard. Hope that helps! 💚

I discovered an IG account from Rhian Hy a few months ago, One Arab Vegan. I was intrigued as I grew up with Middle Eastern food. Particularly a recipe on her blog for baked kibbeh (cracked wheat, meat, and spices) which is traditional made with lamb. She used pumpkin in place of the meat. I was pleasantly surprised at how similar the taste was. I would love if you tried a version of your own and shared! :)
