Maharashtrian thali
Varan
Tur dal 1 cup
Ghee 1 tbsp
Water 2 cups
Turmeric pwd 2 tsp
Mustard seeds 1 tsp
Salt 1 tsp
Curry leaves 3-4 pcs
Jeera 1 tsp
Green chillies 3 nos.
Hing 1 tsp
Garlic cloves 2-3 nos
Tomato chopped 3 tbsp
Coriander chopped 1 tbsp
Jaggery 1 tbsp
Bharleli vangi
Ingredients:
Brinjals 5-6 pcs
Chopped onion ½ cup
Crushed peanuts ½ cup
Kanda-lasun masala ½ tbsp
Salt 1 tsp
Turmeric 1 tsp
Red chilli pwd 1 tsp
Garam masala ½ tsp
Coriander chopped 1 tbsp
Sugar a pinch
Peanut 2 tbsp
Water as required
Chicken tariwala
Oil 3 tbsp
Chicken 700 gms
Fresh coconut ¼ cup
Desiccated coconut 2 tbsp
Coriander seeds 1 tbsp
Black pepper ½ tbsp
Bay leaf 5-6 pcs
Star anise 1-2 pc
Cinnamon 1 inch
Green chilli 3-4 nos.
Garlic cloves 5-6 nos
Coriander handful
Onion chopped 1 cup
Ginger-garlic paste 2 tbsp
Turmeric pwd 1 tsp
Kanda- lasun masala 1 tbsp
Chicken masala ½ tbsp
Red chilli pwd 1 tsp
Coriander pwd ½ tbsp

Bharli vangi (baigan) har region ka apna apna style hai..
Chicken me aapne jo Kanda lasun masala dala hai, vo Vidarbha me use nahi karte..
Masale bhat banane ka bhi sabka apana tarika hai, lekin hum aloo jarur dalte hai..
Marathwada , paschim Maharashtra me jyada tar jawar, bajra ki bhakar banate hai.
Vidarbh me simple gehu ki roti, kabhi kabar jawar ki bhakri...
Sabse common food item hai pooran poli jo apko pure Maharashtra me milega. Uska bhi sabka apna tarika hai.
Vidarbh me pooran poli suger ke sath chhoti aur moti banayi jati hai, jo ghee k sath khate hai.
Baki regions me gud ke sath usko patla aur bahut badi banate hai, jisko narial dudh, aam ras, aamti ke sath khate hai....

@@ChefAjayChopra I have several dishes as favourite..but mostly I like home cooked food like Gavarichi Sheng(with groundbut powder), Village style Vang-batata, Chicken/Mutton curry (Kala Rasa Anni tambda Rasa) all of these spicy dishes served with Bajara / Jowar bhakri.

Ajay ji, Thanks fos showing such a lovely dishes. The only thing, Lapshi goes well with Jaggery and lapshi should be properly cooked before putting jaggery into it.

Thanks for a typical Maharashtrian thali Ajayji. I'm a gujarati having a CKP mother in law. So, have seen both types of food.
My origins are south Gujarat. All Konkan coast people make use of rice flour. We make soft phulkas out of this type of rice dough. They simply melt in the mouth and are especially eaten with aam ras. Thank you🤗

It was great watching traditional Maharashtrian cuisine on your show. A very good initiative. Thank you.
A suggestion: For any bhakri dough, whether jowar, bajra , nachani or rice, when the water starts boiling in the ganj, add a tbsp or two of oil or ghee to it along with salt. Put off gas Then add the flour, mix roughly with a wooden ladle, cover the ganj and let it rest for 5 minutes. Then take out the dough onto a paraat while it is still hot/warm enough for you to knead with your hands. The dough has to be kneaded fast & well, to avoid cracks. If it feels dry, sprinkle hot water while kneading. Cover the dough with a damp muslin cloth while you make the bhakri.
Water should not be added to brinjal sabzi or vangi chi bhaji. It has to be cooked in oil only otherwise it will taste paanchat or flat. After the oil tadka, do not add the masalas. Just put the bharleli vangi in the oil, let it be coated with oil on all sides, cover & cook only in oil on a low flame till almost 80% done. Then add the masalas along with finely chopped tomatoes, mix well and cook on low flame. The tomatoes will provide the moisture and sourness and the dry masala will not burn. Dry dessicated coconut is essential in Maharashtrian cooking. You must add it to the masala.
