where does he explain his symptoms that lead him to changing out the thermostat?

I didn't hear the symptoms but i can share what they are. If your fan is running but temp fluctuates, like temperature goes up at a stop and then cools once you start driving again, then it's most likely the thermostat. Old thermostats (especially in old cars) corrode and will "stick" in certain positions. If you're overheating then it's getting stuck either partially closed or completely closed and will prevent hot coolant/water from engine to circulate through radiator. Reving the RPMs up will spin the water pump faster forcing the flow of water through a partially closed thermostat allowing it to cool down. That's why it may cool back down once you resume driving.
If you live in a hot place then you can simply just remove the thermostat and allow it to always be open. It may affect fuel efficiency slightly but it's better than overheating!

Whats the white cable that sits near the hose connector and the exhaust. Think mine needs replacing someone let the plastic get melted.

Would love my fix to be that simple I'm currently fighting 2 coolant issues 1 it boils over out the reserve tank at half temp just ordered a new thermostat temp sensor and the pressure cap and the second is I've got no fans working it's not the resistor as I've only just changed that last weekend and by putting a direct feed to the plug on the passenger side from the fan both run so I'm thinking it's a relay issue but even by swapping the relays around I've still got nothing

Had the same issue. Replacing the reserve tank fixed it for me. System was not properly sealed due to leaking reserve tank. The coolant has a higher boiling point under pressure, so it won't boil over anymore once everything is sealed and pressure can build up (The low fan stage only engages when ac is running, the high fan stag engages at about 110°C coolant temperature)

What were your symptoms that prompted you to change the thermostat? Thanks

I had the the water reservoir filling with boiling water and spilling out from there .... ive since changed the themostate housing and cap and seems to have fixed the issue ...so could have been just the cap on the themostate housing... the cap has two seals one to stop the water going to the reservoir tank and one to seal the cap its self to the housing . I thought originally it was the themostate as the pressure in the system could have exceeded the 10bar spring which is on the cap casuing the water to go to the radiator water reservoir...
