    Make vegan guà bāo (Taiwanese pork buns) with this easy recipe!     -JACKFRUIT BAO | VEGAN GUA BAO RECIPE-
    Makes 8
    INGREDIENTS
    For steamed buns (mantou):
    1/3 cup + 2 tablespoons warm water (105-110°F)
    1 cup all-purpose flour (5.29oz)
    1 teaspoon sugar
    1 teaspoon instant yeast*
    For five spice jackfruit:
    1 20oz can of green jackfruit
    2 tablespoons canola oil
    2 tablespoons maple syrup
    2 teaspoons Chinese black vinegar
    1 teaspoon Chinese five spice powder
    1 teaspoon garlic powder
    1/4 teaspoon salt or to taste
    Peanut Topping:
    1/4 cup roasted peanuts
    1 teaspoon sugar
    Other condiments:
    chopped cilantro
    pickled mustard
    vegan mayonnaise
    Equipment:
    Food Processor or Mixer, optional
    Parchment paper (8 4"x4" squares)
    Steamer

    In order to completely remove the fruity taste from the jackfruit just boil it for about 30 min, rinse, and the taste completely disappears

    I just made different type of steamed asian buns and realized that they're very similar to traditional dumplings made on the south of Poland. Which means hello tasty store bought buns for quick supper. Tbh I don't follow your recipes very closely. I adapt them to regional ingredients because I'm sick of eating the same things but at the same time I don't have money for specialized asian and vegan products. I love your channel because I get so much inspiration to experiment with my own slavic roots. I often feel that Eastern European and Asian cuisines are good match because they use a lot of different vegetables, mushrooms, spices and technics. For example I make my favorite polish pierogi, freeze them and use your technic of pan frying/steaming to make them instantly. It's a great tip!

    My mouth is totally watering looking at these! I need to try to get some more jackfruit! I think your uses of jackfruit have been so creative: "chicken" salad, "tuna" sliders, and now this. So much more exciting than just "BBQ pulled pork" which tends to be the default for jackfruit recipes.

    for the filling you could perhaps use portobello mushrooms as they have some chewy texture to them. They also look kind of the same when cut width-wise.

    If I could not get jackfruit which I'm not sure yet if I like or not I would use shredded rehydrated Butler soy curls. Probably rehydrated in the marinade or some of the marinade with some water added and then add them all back to the marinade and add a few more marinade ingredients that are in the recipe. I cut them in half and shred them. They make an awesome chicken salad shredded and rehydrated in no chicken bouillon. I love these so I'm going to have to try to make them.

    if you can't find Jackfruit, I suggest you try a young bamboo shoot, oyster mushrooms or Lotus root. the canned kind would probably be the easiest to find in an Asian market but if you get them fresh or dry just be sure to reconstitute them or boil them until they're soft.

    This sounds awesome! I just tried fresh Jackfruit for the first time and I am completely addicted, it's like the best fresh fruit ever! But it's not always easy to find pre-sliced and I don't want to buy a whole one because it's the size of a baby LOL...
    I also thought this recipe might work really well with mushrooms like shiitakes

    If/When you do a new tofu making guide, I'd be really interested in hearing a bit more about what to do with the byproducts, as every step seems to make a byproduct or two! (Yuba, liquid from pressing curds, and most importantly, all the okara, with special attention on how to prepare it into something edible and non poisonous, as I read you should cook it with a "wet" heat, also the logistics of what to do with so much okara, at what point could you store it for later, how long does it last, do you freeze it, or dry it into flour). I love making tofu (with your previous videos) but the amount of compost I end up with seems like a waste, which puts me off a bit!

      Theres hundreds of okara recipes online. U can fill whole book or five with them. Fun and inspiring! U can also put it in pastasauses, make Birgers and meat balls, theow it n stews just by feel. Or in bread.

    I grew up cooking and baking, that was back when you actually sifted the flour. Heck my mom still had that sifter when I went through her kitchen a couple years ago. I like the fluffing method better. It is much less messy and time consuming.

    Great! I tried these following the recipe and found them to be very flat and hard to separate. When I tried again I added baking powder at the point I was rolling the dough which really helped them puff up. Also put oil on one side before folding over which meant they actually separated without needing to cut them. Good luck if you try them!

    I noticed that you used the *entire* jackfruit pieces (excluding seed pods) and was wondering if the core was better used in this recipe, or just overall in general? I made a recipe with it and cut off quite a bit of the core and felt like I was wasting an edible part. Thoughts?
    You are the queen of saucy seasonings, so I am VERY excited to try this--when it's cool enough here in Los Angeles to turn on my oven again!

      Good catch! The core is a little tougher than the rest. So I don't use the core in my jackfruit sliders recipe because of the way that one is cooked (not very long). But in this recipe, it's treated differently and the core is cooked well enough to get tender. Next time you don't need the core in a jackfruit recipe, save them to use this one!

      Hi Carol, I got the book and have cooked 3 recipes from it so far. Its a great book, and all the recipes have turned out better than expected! I find the book really goes into detail about what ingredients work and what don't. Such as aquafaba being the best egg replacer. I can see it being a good video review, there is so much to say about it.

      The book is good, overall, I feel. The one huge disappointment was the Yellow Layer Cake. I followed the recipe carefully, but the cake was hard. It looked beautiful, decorated nicely, but I was so embarrassed when I cut into it for my boyfriend's birthday and saw some of our friends left some cake on their plates. Apparently I need to redo the recipe to see if it is user error or just not the best recipe. I have a culinary degree so it was especially hard to have served so many delicious cakes to bomb with this new one.

    you can put oil on the bun folds so they separate easily and left the bun a smooth surface

    It looks so yummy!!! thanks for sharing that jackfruit ca be sustituted by tofu and I guess by tempeh too. Do you think I can make this buns with whole wheat?

      I haven't tried with tempeh but that sounds good! I think you can do this with whole wheat but you'll need to reduce the amount of flour a little. Or increase the water a smidge. If I try it, I'll share my results! Let me know if you do too :-)

      Azahara Gil When I make pizza crust, I use half bread flour, half whole wheat flour, I put yeast in the flour and set it aside while I make the pizza sauce, and while I cut up the toppings. When I put in fresh yeast, the flour has never not risen just for the few minutes I set it aside, AND, it rises more when the pizza bakes. I haven't made an all whole wheat flour crust, but making it half and half, yes, the whole wheat flour rises.

    I came into owning a bread machine. I use it make all sorts of dough for pizza, rolls and breads. I am going to try this recipe using the dough setting. That bread machine is a love - hate thing. I love the time it saves me, but hate the space it takes in my kitchen. I was eyeing that food processor you use to take the place of mixing it. It looks smaller and the trade off wouldnt be that much extra work....I think?

      Maybe. It does a lot but it's also quite tall. It's too tall to fit nicely on my counter (under the cupboards) so I have to pull it out when I use it. The base is quite large for a blender. But of course, less footprint than a food processer + blender combined...soo.....?

      Try putting it on parchment so you can lift it with a spatula. Hope that helps!

    I have always wondered why are bao so white? They have made with regular yeast and all-purpose flour. So what do we put in our bread recipes for white bread that makes it not so bright white?

    Mary, when I made this my dough ball didn’t seem to be as large and puffy as yours. It did rise and my buns still came out real, just small in comparison. Could it be my method of scooping flour? I know weighing would be best but I used the fluff, scoop and scrape method which I’ve heard is second best. Any idea how I may have goofed? Thanks! These were really delicious and reminded me of the food truck I used to work on in high school expect I wasn’t vegan back then!

      You need to go by the look and feel of the dough rather than exact measurements when it comes to bread dough. Things like humidity affect the amount required. Still, I don't think this was the problem.
      It's probably that you needed to let the buns rise a bit longer or in a warmer location.

      I haven't used raw so I'm not sure. Canned jackfruit is cooked so you can cook yours if you want to start at the same point as me. Good luck!

      Yes but you have to reduce the amount of flour as whole wheat absorbs more liquid. Also, it will not be as light and fluffy. You may want to sift out the bran from your flour at first until after the first rise. Then knead the bran back in afterwards. This helps the texture be a little less heavy. But still...you gotta lower your expectations. Good luck!

    Okay, now I don't know how I want to cook the jackfruit that I have. BBQ or 5 Spice style. Can't have the buns (gluten sensitive) but I'm betting this would taste good on a regular bun or in a corn tortilla.

      Yes, any soft bun will be good. But I'm going to work on a gluten free steamed bun. And when I do, I'll be thinking of you!

      Blunt Household You can shred canned young green jackfruit in water with a fork then toss it in BBQ sauce and bake it at 350 for about an hour and it's great on burger buns! It gets chewy with a little bit of crispy edges. For sauce I recommend Trader Joe's sriracha garlic bbq sauce.

    I heard that it is recommended to Boil the jackfruit in water 2-3 Times to get rid Off that tin and metallicy flavour of the jackfruit that comes in a tin?! what is your experience?

      I haven't heard of doing that. And haven't had found any metallic taste in the jackfruit that I've bought so far. So I don't think that is necessary.

      Maybe. But the dry heat from the oven really helps to get a good texture. On the pan will be a bit different but I'm sure it can still be very good.

      Mary's Test Kitchen | Vegan Cooking I tried it in the oven but increases the heat bc I had too much liquid on the Sheet...I shouldn't have left it unattended...bc I there was only charcoal left, when I checked in them! :(...but until then it smelled really good! :) better luck next time!! great recipe anyway!

    The buns turned out AWFUL for me they didn’t rise the second time, I eventually put them in my oven at the lowest possible temp to give them a warmer place to rise even tho the first rise was in the same spot in my kitchen and there were no issues that that. Then damp towel I covered them with for the second rise stuck to the top when they were done raising there was 0 separation for the pocket I just had semi circles of dough that I had to slice once cooked oh and ofc since the towel stuck to the top they looked mangled af and deflated a bit. Taste was fine but I’ve gotten better results visually that are at par with taste from other recipes and I would definitely brush the inside with the smallest amount of oil before folding to prevent sticking. Lastly if the recipe again instead of rolling individual buns I think I’d just roll out a sheet of dough and punch out circles with a cookie cutter, would be way faster and all your buns would rise at the same speed instead of staggered.
