    Ingredients:
    1 large egg
    1 teaspoon almond extract
    1/4 cup honey
    2 tablespoons coconut oil, melted
    2 cups blanched almond flour
    1/2 cup coconut flour
    1/2 teaspoon baking soda
    pinch salt
    For the Icing
    2 cups organic powdered sugar
    1-2 tablespoons water

    Icing tip: I like to use lime juice or orange juice instead of water. It gives the icing a nice taste. :)

    I made this recipe but made one big cookie. Like a cookie pizza. Topped it with coconut whipped cream and sliced strawberries. Delicious. This will be my new go-to recipe for sugar type cookies!

    For homemade icing, melted butter works in place of water and tastes like Gma’s icing if you know what I mean. That and powdered sugar can have a funky aftertaste (have not figured out why) the butter removes that nasty taste and again the frosting is pro taste.

    I did gluten free walnut fudge brownies and white blondes with pistachio and coconut
    Then I did oatmeal raisin and chocolate chip
    And I did pumpkin bread I cut it into cubes and put then in ziplock holiday color containers and have the. Away

I have everything that I need and haven't been able to do any baking yet.     Powdered Lakanto would be a great sub for honey, and coconut butter pi’s great for frosting. Satisfying Eats has a great chocolate shot recipe, and tropical tradition has great coconut butter recipes such as chocolate recipes. It is also easy to use Japanese white sweet potato in baked goods!!!

    If you fill the water bottle with with ice water it will help it roll out. However you can get rolling pins fairly cheap.

      If you blend the coconut sugar into a fine powder, you get the same consistency as any icing sugar. Then add water and you got a healthier icing

    Thank you for the recipe. I will try this Christmas. I like to make Doubbletree cookies. Not too healthy but delicious. I also like to make "Marranitos" is a mexican cookie in the shape of a little pig ( I have the cookie cuter for this) they taste close to ginger bread cookies but much better because they contain a lot of molasses ;)

      the yolk is what binds the ingredients if you cant eat it for a certain reason what i would do is use egg whites but add something else like a little bit of banana or even a little pumpkin puree

    Does the honey have to be a special brand? I did everything how you show in the video and was very hard to make the cookies they broke all the time.

    Can almond flour be substituted with some other type of gluten free flour? Like using only coconut flour in the recipe?

      yes but you will need more wet ingredients cause almond flour and coconut flour absorb differently

    Thanks for the video, Dani. I have a question: I'm not allowed eggs right now (healing my gut) and thought I couldn't have cookies. I am using ground flax seeds for egg replacement. Do you know if that would work in the place of the eggs??? I might be able to make some cookies if you think so. Thanks!

      Mo Mapes yes flaxegg will work. Flaxegg do tend 2 have that flaxseed taste which can be a bit overwhelming but that's my opinion. Chia egg will wrk 2
