My mom got "a" recipe from an Orange Julius stall in Memphis sometime during the 90's: 1/2 tsp vanilla extract, 1 orange (doesn't say anything else here...), 1 square inch of the "peel", if desired, 1/2 Cup frozen orange concentrate, 2 Cups water, 2 Tbsp. Sugar, 1 1/2 Tbs. powdered milk, 1 Cup crushed ice. Blend all but ice in a blender, then add ice a little at a time. By taste, there were definitely regional variations to the recipe, and in Memphis probably fly-by-night operators without their franchise license, so who knows which one I have.

Egg whites aren't really an issue for salmonella. You can drink cartons of them and wouldn't get sick. Powdered probably kept longer and possibly helped with texture?
