    KETO NO-CHURN MINT CHIP ICE CREAM
    This is a keto version of the ever-popular sweetened condensed milk + whipped cream recipe that makes the base of most full-carb no-churn ice cream recipes. Feel free to use dairy-free alternatives for this recipe such as coconut cream in place of the whipped dairy cream.

    KETO SWEETENERS:
    Allulose and tagatose are the only two keto sweeteners I know of right now (2019) that act like sugar when cold and when there is very little water content present, that means they can be used successfully to make something like sweetened condensed milk, and work great at keeping no-churn ice cream smooth instead of hard and icy.
    You can try using something like Swerve or other powdered keto sweeteners, but I can't promise the texture will stay smooth. I've tested this recipe with just pure erythritol and it ended up crystalizing quite quickly and resulted in grainy, crunchy, hard ice cream.

    RECIPE: yield 1 pint (2 cups / 480ml)
    2 cups / 480ml cashew milk (unsweetened)
    3/4 cup / 160g allulose (or tagatose)
    1/8 tsp sea salt
    3/4 tsp peppermint flavoring (drop it to 1/2 tsp for a milder flavor)
    1 cup / 240ml unsweetened heavy whipping cream (or coconut cream), whipped to 2 cups volume
    3-6 drops green food coloring (or 1-2 tsp natural food coloring such as spirulina)
    1/4 cup / 45g finely chopped keto-friendly chocolate

    This is new material - making the condensed milk first. Can’t wait to try it! I’ve used all HWC before and got a waxy mouth feel either from that or the Swerve.
    EDIT: 5 days later - Made it and LOVE it. You are nothing short of a genius. Can’t wait to try flavors now!

    You're so amazing as usual, thank you for sharing! Love that you didn't use dye for the recipe. Do you mind sharing the Tupperware you used for the ice cream? The container top looks so intriguing. I heart kitchen gadgets. Oh and do you think making coconut whip cream will hold for a substitute? I've been thinking about making my own and So Delicious chocolate mint is my favorite. You've read my mind! 😍

      I tried it with erythritol when I was testing it out, it was great the first day and then turned grainy crystallized the second day. :/

      @@yafavbrujita762 About 7.5ml to 15ml for this recipe. A little bit of vegetable glycerine also helps, around 2.5ml to 5ml.

      I’m sorry.. I’m American with a public school education.. is that about a teaspoon for 7ml or 3 teaspoons for 15 ml of vodka. That’s the only thing I have at home. Idek what glycerine is.

      Any low carb, keto diet appropriate milk. So unsweetened almond milk, coconut milk, macadamia milk, etc etc

      I think so. I've made frozen desserts with almond milk. Alternative milks are mostly water with various gum thickeners.

      almond milk will work fine but add a bit extra fat if you can, the sweetened condensed milk is mostly just about evaporating off the water content so if you milk is 90% water that's not very effective. :)
