I just found you recently and you eat like my husband and I. I love the way you batch prep. What a fantastic video. I hope you will make a cookbook out of all of your favorite recipes. There are several things i have looked for such as pizza crust, tortillas that you don't have to roll out, burgers... Thank you for the great video. Thanks so much for this live-prep video. This helps a lot...also thanks for sharing how you store the potatoes so they don't get too wet. I had mine in a baggie...and after a few days, they were getting wet. I salvaged them, by drying off with paper towels and then leaving them in the open bag. Will use a container next time though without a lid! Those mushrooms look so good. I like that you mentioned how you would use them in various ways ...veggie burger, salads, baked potato and of course, straight up eating. I will be trying them after my next big shopping trip to buy the mushrooms and vinegar.

You are so lucky that your Costco has so many organics, especially produce. Ours has relatively few...carrots, cukes, celery, some lettuce bins, mangos, 1 kind of apples, bananas, blueberries and occasionally some others.
My husband lost over 120 lbs by cutting his carbs and increasing his meat & vegetables. We went on the same diet, he lost 60lbs and I put on 12lbs. Moral of the story; what works for one may not work for all.

I wash it when I get home from the store and lay it spread out on a kitchen towel to dry. When dry put it in a container with a paper towel to absorb any moisture and it usually lasts 5-7 days. Some people trim the ends snd put it in a glass of water. I have better luck with my method. 🌱

For the Ninja, take a regular sil pad and trim off a bit from one end. Trims well, you can get it to fit perfectly.

For moving chopped onions and other veggies I used an OXO multi-purpose scraper. It so much easier than using a knife. Cheers

Not everything that Local Spicery sells is organic but they do tell you when the ingredients are organic. They try to source organic ingredients.

I have developed an allergy to the jalapeño so I would adapt the recipe using zucchini. I can use red pepper flakes and spices.
Stuffed mushrooms would be delicious and stuffed zucchini and stuffed bell peppers.
