Ingredients: 15cm removable bottom pan (You can buy it at Daiso)
<Tart dough>
85g biscuit
35g unsalted butter
<Rare cheesecake>
200g cream cheese
50g sugar
150ml whipping cream
1tbsp lemon juice
8g gelatin
2tbsp water(to soak the gelatin)
<Strawberry puree>
200g strawberries
80g sugar
1tsp lemon juice
2g gelatin
1tbsp water(to soak the gelatin)
Instructions:
1. Put the biscuits in a freezer bag and crush them into small pieces with a rolling pin.
Note: The finer you crush it, the cleaner it will be.
2. Put the butter in a heatproof container and heat in a microwave at 600W for 40 seconds.
3. Add the melted butter to the bowl with the crushed biscuits and mix well
4. Place the biscuits in a mold and chill in the refrigerator for about an hour.
5. Cut the strawberries into small pieces.
6. Put strawberries, sugar and lemon juice in a pot and simmer over low heat until the flesh is tender.
7. Smooth with a mixer or hand blender.
8. Strain through a strainer, remove the seeds, and let cool.
9. Soak 2g of gelatin with 1 tablespoon of water. (for strawberry puree)
10. Add water to gelatin for rare cheesecake and let it soak.
11. Add cream cheese that have been returned to room temperature, sugar, cream, and lemon juice in that order, and mix well each time.
12. Heat the softened gelatin in the microwave for 30 seconds to dissolve it, then add it and mix.
13. Heat the softened gelatin in the microwave for 10 seconds to dissolve it, then add to the cooled strawberry puree and mix
14. Leave about 3 tablespoons of strawberry puree and add all the rest to the rare cheesecake dough and mix.
15. Pour it into a mold that has been chilled in the refrigerator, add the strawberry puree left on top of it, and marble it with a bamboo skewer.
16. Chill in the refrigerator for at least 2 hours and you're done. Enjoy!!
