  • It's heating up here and I needed a frozen treat that was easy and delicious. So I bought popsicle molds and decided to start with fudgesicles because when I looked up a recipe I realized it was just a pudding recipe frozen. And I recently just developed a keto pudding recipe, so I started there and tweaked the recipe until I got a soft, melty, creamy fudgesicle recipe.

    Keto Fudgesicle Recipe:
    8oz./1 Cup Heavy cream
    8oz./1 Cup Alternative Milk (Almond, Cashew, Macadamia, Flax, Oat, Coconut)
    24g/1/4 Cup Dutch cocoa powder (or any cocoa you like)
    40g/1/4 Cup Allulose
    30g/1/4 Cup Powdered Sweetener (Monkfruit/erythritol, Swerve) or just all Powdered sweetener - 40g/1/3 Cup
    6g/2 tsp. Arrowroot Powder
    1 1/2 Tbs. Cold Water
    1 tsp. Unflavored Gelatin
    28g/1 oz. Lily's Dark or Semi-sweet chocolate chips (or any sugar free chocolate)

    I love the revisit! "Back Then" I could have nuts , (the Almond Milk), since then I have stopped but you now are usually nut free, and since you used your coconut milk, I know it will work here too!!! Thanks for all your hard work. I think of your videos as Keto Cooking Classes!!!!

      Awesome! You can follow the old video instuctions just get everything set up before turning the milk and cream mixture on, which I didn't do in the original video. Lol

    Me again! I wanted to answer the question you asked about if we liked seeing this 'revisit' type video -- and I say YES. Things/Products change so fast and can be specific for a reason, or can be substituted -- one of the reasons your videos are so great. You mentioned about all the ice cream videos because you love ice cream. So I searched and there are various videos over the last 4 years. I have never successfully made ice cream, I have just one of those small units that you put the bowl in the freezer. I would love to see a redo on plain old vanilla ice cream -- it's not that low carb in the stores and what my Type2 diabetic husband considees desert, is at least 4 servings;-) And those questionable ingredients. The vanilla would be great because we eat it on lots of things. If I could get that coming out well, I might feel justified in investing in a better/and/or/bigger ice cream maker. A 'Revisit' would bring together all the tips and knowledge you have gained, and I love your 'Keto Cooking Classes" So that is just a little feedback from a really big fan. ;-) When I'm watching a video or reading your writing, and my husband askes 'what'ca' doing? I just say 'Watching 'baby-momma' and he knows just what I mean. We followed you thru your wedding, pregnancy, harrowing delivery in Buffalo Blizzard. We were worried about you! Love the updates of a subject that is constantly changing, and learning 'why' leads to more likely successes than failures, Thank you.

      Awesome!! I haven't but the problem with keto sweeteners is that the only one that doesn't spike blood sugar and is sugar free is allulose. I thought isomalt would be a good substitute because it is used in sugar making and is a sugar alcohol but it spiked my blood sugar. But maybe if I can figure out how to stabilize the cooked allulose better I may be able to figure it out in the future.

    Another week another great recipe! I have time tomorrow to try this recipe. I will try to substitute the arrowroot with xanthan gum because i don't have arrowroot

      Thanks! I hope you enjoy! Xanthan gum will be hard to incorporate into the liquid am doesn't need to be heated to thicken. It thicken immediately and tends to clump in liquid. If anything I would say to use cornstarch which is a more comparable substitute for arrowroot.

      ​@@KetoUpgradeinstead of just cornstarch I have switched to 'Clear Gel cooked type'. It is used in many canning recipes that need to be heated before they will thicken. I have not compared labels for ingredients or grams. You have a LOT of us older gals who used to can everything that couldn't escape the jars--and we gained a lot of weight with the yummy foods we put up. Canning cannot be directly switched from carb loaded to carb free ingredients (because there is no federal money to pay for testing that verifies safety of the product. Or I would have a channel inventing low carb boston beans for canning, and low carb no sugar pie fillings, etc.). Since I am 74 and unlikely to EVER have a channel, I hereby bequeath this idea to you. You are already trained in food safety (maybe not for canning but that is SO easy to learn) I feel confident that You
      could reach out to the testing facilities to maybe set up combined efforts to get more modern recipes approved for canning/long term storage. Food for thought???❤💃🤗

    I made today your chocolate Swiss roll for my husband's birthday! He loved it! It was his favorite childhood cake and to be able to have it on the keto diet it's a privilege! I enjoyed your recipe so much that I'll be making it every week! I'll try the plain one with birthday cake flavored protein and I'll try as well the pumpkin version you've got but this time his request was chocolate flavor and I just wanted to surprise him with childhood memories 😋
    I would like to ask you, because you're really experienced. There are a lot of your recipes that have oat fiber. I don't have it. I know that's not easy to substitute some flours but, to your knowledge, what would be the best keto flour or combination of flours to substitute oat fiber? The flours I've got : coconut flour, almond flour , I got hazelnuts, walnuts, flaxseeds, pumpkin seeds, chia seeds, sunflower seeds I can grind, I've got lupin flour, egg white powder and unflavored and protein powder. I've got psyllium husk powder but that's not a flour. What could be my best substitute? I've got another question, I've been struggling a lot because I can't have vegetables without having lots of pain and bloating and I'm lacking of fiber in my diet. I've been taking psyllium husk kind of smoothie everyday and I drastically got better. I want to add a little psyllium husk powder to my recipes in cakes and muffins and brownies but I don't know how much is acceptable to not screw up the recipe. I tried to make a calculation based on your recipes for cake donuts and I think I got to the conclusion that for example , for every 90gr of coconut flour in a recipe I could add between 8gr to 14gr of psyllium husk powder (I have it already in powdered form). What's your thoughts on this? Would you suggest another measurements? Thank you so much for your patience 🙏🏻

      Yay so glad you enjoyed it!! Hope you love the rest! So far the only substitute I have found for oat fiber is bamboo fiber. Psyllium husk is a fiber but I think it absorbs more liquid that oat or bamboo fiber. So you may be able to sub some of the oat for psyllium. The reason I use psyllium husk in certain recipes is to get a thicker batter and denser outcome, so it may work in cakes and such, maybe replacing some of the xanthan gum in the fluffier baked goods. But you will probably still get a denser cake. You may also be able to minus some of the coconut flour in cake recipes and replace with the psyllium for a lighter texture. Hope that help!!     Regarding the Lakanto powdered monkfruit/erythritol. I have Lakanto Monkfruit Sweetner With Erythritol Classic White Sugar Replacement (this is granulated, of course) have you ever tried blitzing this in a VitaMix or Coffee/Seed grinder to consistency of powdered, then of course measure by weight? (or anyone else had luck?)

      I've heard of people doing this. It may work for this recipe but I don't suggest it for things like frosting because you can never get it all as fine as a factory can.

    Do you Mix with the chips and butter first and then add Gelatin or do Gelatin first then chips and butter?

      Lol you can do it either way as long as it's hot it will all melt together fine.

    This recipe can't be the same as what was made in the video. I used powdered Erythritol and Allulose and the crunchy/ice feel was there again after following wxact to video. Also, no way that's Dutch Chocolate. I used expensive Dutch Chocolate and they came out as Black as Balck Beauty at night not creamy dark like yours or a Dive bar. Looked like charcoal on a stick. After two bites got used to it but no one I know would eat it

      You probably had different brands than me. Like I say in multiple videos different keto brands act differently. I use a powdered monkfruit/ erythritol blend, in the original was lakanto and this video so nourished brand. In the original I used ghiradelli Dutch cocoa in this I used a premium high fat cocoa. Sorry you aren't happy with the outcome but what I said I used is what I used and they weren't icy.

    Im ketovore which means mostly carnivore but ill make the occasional exception on an ingredient or two as long as its still keto. Im dying to see if youre able to improve on this recipe???

      I don't know a lot about carnivore. Can you have added fibers on carnivore? I get it's meat, dairy and eggs. But what about xanthan gum, psyllium husk, baking powder?

      @KetoUpgrade those added fibers would be considered ketovore. Some carnivores like myself will use minimal ingredients that aren't animal based as long as they aren't inflammatory. Some are way more strict and don't use any sweeteners at all.
