Idli Podi Recipe | Idli Powder | Idli Milagai Podi | Gun Powder Recipe with step-by-step photo and video recipe. Podi recipe is generally served as a substitute for traditional chutney recipes when served with idli and dosa. It is hugely popular in South Indian states, especially in Tamilnadu and Andhra Pradesh. Apart from being a breakfast magic powder, it is also served with rice and even with roti and chapati as spicy condiments.
This recipe of Idli Podi was shared by my mother and perhaps she learned this recipe while she was living in Guntur before marriage. She moved to Udupi after marriage to her birthplace but did bring several recipes from Andhra Pradesh. Gunpowder or Idli Milagai Podi is one such recipe that was embraced by our family. She used to prepare this frequently and I used to enjoy this with set dosa and most of the South Indian breakfast recipes. Moreover, I used to enjoy this even with boiled rice, curd rice, and even with bread toast. In short, the use of this spice mix is myriad and there is no hard and fast rule to use it for idli, dosa, or rice.

Perfect Idli milagai podi 👌Idli is also perfect in your video and you can add little jaggery while you grind idli podi, it'll balance the spice and sour taste
We have some little improvisation on this recipe. We didn't add tamarind. We add garlic cloves , asafoetida and blackpepper as well with same other ingredients. We fry and grind all together
We make it a little different. Same pulses, chillies and to it we add dhaniya ( half the quantity of the pulses ) and fry that too. It tastes even more better.

@@saraswathisunku3401 We the keralites usually doesn't like dhaniya in this. My personal recipe is with Urad Dal + little chana daal + little rice + little sambar daal+ Red Chillies+ Asafoetida +Garlic cloves+ Black Pepper + Salt+ curry leaves. Dry fry and coarse grind. Served with ghee /coconut oil/ sesame oil to make it paste

I reduced the red chillies to 60 grams but it still turned out a lil spicy…. Also ours dint turn out bright red like yours…. And it’s the same reason…, they have used Kashmiri chilli which gives extra color but not that spicy as to what I used - regular long dry red chillies
But we still loved the outcome ♥️ Thank you for the recipe

can we use ready-made red-chilli powder instead of grinding dried chillis?
I add a few fenugreek seeds, garlic and a little piece of jaggery along with the above ingredients, but instead of dals I use groundnuts/ peanuts for idli podi

Did anyone try this?
I roast a cup of peanuts, 1 tsp coriander seeds, 1tsp methi seeds, 1tsp black pepper corns, moong dal instead of toor, few pumpkin & sunflower seeds too. Crystal salt & solid hing fried in oil. It tastes yummy

Reason for mine gun powder doesn't look red like yours and it is spicy as well😢
You might have used normal dry red chilly... Use kashmiri chilly, it will give the chutney a nice colour and also it's not very spicy.

Don’t put 70 grams chilies as shown it will be so spicy and tastes like chilli .
