Great! I do ChinChin in commercial quantities. I don't use milk or egg but when you eat it, you think there is milk in it. All I do is to use the best quality of the ingredients, measurement accordingly. Very soft, crunchy, yummy and tasty. To God be all the glory.
You can add egg white, just that skipping it will make your chinchin more crunchy. You only need very little baking powder in your chinchin recipe. I hope this helps.

Give your chinchin enough time to fry, fry in batches, don't crowd your oil, or add too much at a time. This will allow your chin chin to fry properly and prevent it from absorbing excess oil
