4 Simple Ways to Make Your Mexican Layer Dip 100X BETTER!

  • It's hard to go wrong with a 7 Layer Mexican Dip. Beans, guacamole, sour cream, cheese...what could be bad about that? Not much! But, did you know it could be SO MUCH BETTER?!
    We're going to walk through the four most essential layers of a Mexican Layered Dip and I'm going to show the easiest and most delicious way to upgrade it for the party!

    We'll start with the guacamole, move it over the sour cream, then hit up the beans, and finish it off with my favorite layer -- the cheese! Last, I'll show you the best 7 Layer Dip toppings, and you'll be glad to see, it all comes together with a great deal of ease!
    HERE'S WHAT YOU'LL NEED:
    2 large, ripe avocados
    Juice of 1 lime
    3/4 teaspoon Kosher salt
    3/4 cup sour cream
    1/3 cup mayonnaise
    1 tablespoon vinegar or rice wine vinegar
    2 teaspoons store-bought taco seasoning (or homemade)
    2 (9 ounce) cans bean dip (i.e. Fritos Bean Dip)
    1 1/4 cup freshly grated Cheddar cheese
    1 (2 ounce) can sliced black olives, drained and patted dry
    2 Roma tomatoes, seeded and diced small
    2 green onions, sliced
    HOW TO MAKE IT:
    Have ready a 4-cup capacity, rimmed serving dish. You could also use a pie dish or a small casserole dish.
    To make the guacamole, in a medium-sized mixing bowl, mash together the flesh of avocados, lime juice, and Kosher salt using a fork or potato masher t until smooth.
    In a small mixing bowl, stir together sour cream, mayonnaise, vinegar, and taco seasoning.
    To assemble the seven layers of the dip, spread the bean dip evenly across the bottom of the dish using either an offset spatula or the back of a spoon. Then, add the guacamole and spread evenly across the beans, and repeat with the layer of sour cream.
    Sprinkle the Cheddar across the top of the dish, followed by the olives, tomatoes, and green onions.

    I'm with ya on the freshly grated cheese. I use sharp cheddar. Def' yes on the fresh avocado. After the sour cream, I add taco seasoned ground beef, then the rest. I make my own taco seasoning, with plenty of cayenne. I also sprinkle on a few finely diced jalapenos.

    Loved these tips and additions although the sour cream layer seemed too runny. I wonder if I need to use less RWV or less Mayo next time. However was still a huge crowd pleaser and didn’t have any left overs.

      That seems strange to add vinegar to me, and it probably is what made it runny. I think there are some brands of sour cream that are more runny than others as well. I am not too sure about adding vinegar and mayo to sour cream. Why fix what isn't broken?

      Whatever amount of sour cream I use, I mix it with half the amount of room temp cream cheese. It thickens it up a bit.

    Making this today, thank you for posting!! Question: How far in advance can this be made? day before, hours before, etc.? I know it can't be frozen, but can it sit in fridge for a few hours?

      I’m sorry I missed this! You can make the morning of but it won’t freeze well because of the sour cream layer! Hope you enjoyed it ❤️

    Can these layer dips be frozen? I'm trying to freeze some quick meals and snacks in preparation for my first baby & would really like to keep a few of these in the freezer if possible 😬 Makes for a nutritious snack too!

      I would not recommend freezing, mostly because of the sour cream layer!

    Anything you throw together homemade is WAY better than store bought. All store bought dip use to be ok… but now “they” food engineered it so much to make it super cheap and make a massive profit. Tastes horrendous. Make your own cause it only takes about 1/2 hr. You can use pre-shredded cheese, pre-shredded lettuce, pace picante salsa & taco packet. If you use can refried beans- put in bowl & mix in 1/3 ish cup of cold water & mix up so its a little creamy and wont break chips. So easy and yummy.
