Not meaning to be a rotten egg, but we never apply guilt to food! There are always ways to enjoy fabulous versions of great recipes to real life dietary restrictions. Not trying to be offensive at all. Apologize in advance for saying guilt with food is bad, but it's truly what I believe.

FYI Kevin Lee Jacobs if you take them beats and just put them in boiling water after you score them just dip them in that boiling water for about 4 minutes and that skin will slide right off

When I was a more active cook, in younger days, after reducing the broccoli down, I would also chop the stems and add them to the boiling water first. When they were tender, then the florets were added. Since all was whizzed, every bit was used & eaten. Also, I saved choice bits of the cooked florets to use as garnish rather than anything else.
Kevin, wowser what an inspiration! Next week I will make all of these soups. Your videos are such a treasure to view. I always send these videos to my family and friends. When I freeze, as I am cooking for me most of the time (although in winter more guests)….I use small jars that are only filled with an empty space. I prefer to not use plastic and do not use a microwave anymore as mine lucked out and I have managed.
These soups look delicious, especially the leek soup. Please do yourself and viewers a favor by investing in an immersion blender. It will change your life! You'll wonder why you didn't get one sooner. They are not expensive, especially compared to the Vitamix. I have a Vitamix, but never made cream soups because of the hassle using the blender and spilling the hot soup to and from the blender. I have your cookbook and have made multiple recipes from your RUclips videos. My favorites are the scone recipes, tea time desserts, and finger sandwiches. I also love your approach to flower arranging and lovely table decor. I look forward to every video! Thank you.
Kevin thank you for all you do and simply for being YOU. I grew up in France and we had leek & potato soup every evening at supper in the winter. Our version also included a carrot or two but omitted the starch, which is not really needed. We did not have a blender so used an old vegetable mill. I still make it that way, more out of nostalgia than anything else. It’s one of my ultimate comfort foods along with onion soup, of course! I plan on trying your onion soup recipe soon. The season has passed but I’d like to mention that when making a peach desert, you may want to skip the cinnamon (which is far too strong a taste) and replace it with a bit of lavender, preferably fresh. A little goes a long way. I hope you will try that next season. I think you’d be pleased with the results. Thank you

I just finished making the broccoli soup. It is surprisingly creamy given that it is just pureed broccoli with a bit of salted water to get the right consistency. I might need to make some biscuits or soda bread to enjoy with it.

Lovely soups. My family recipe for NE clam chowder calls for unevenly cut potatoes. The small bits break down and thicken the soup. Like you said no need for a roux. I need to make your beet soup. Missed opportunity, would love to have seen one of your cats in that box. Teehee.
