I am a prepper so I appreciate your recipes....love having meals in the freezer...much better than store bought and healthier...On the day I get my groceries,I chop the peppers,onions,carrots,lemons,limes,potatoes sweet and white,squash,whatever and freeze....then I boil a whole chicken,brown a pan of ground beef,throw pork loins in crockpot and put in fridge....then the nest morning,I make my meals and freeze in pyrex dishes and make a huge amount of dinners and lunches...and share with my niece who has a family to feed and she works full time so it helps her so much as well...if a friend or neighbor is sick,I take meals to them..also take a day making cookies,cakes,pies,candies for nieces and nephews and of course their parents...I love your cooking shows so much...
I recently made a casserole for my husband’s birthday that’s similar to yours, I called it enchilada lasagna. Since he is vegan I used vegan shredded cheese. It’s marvelous!

All of the recipes look delicious. But my favorites are always breakfast! I can eat breakfast any time of the day. Especially the burritos! I just add a little bit of salsa on top of the cheese before I roll them.
Wow! That was a very very helpful reminder to start meal planning routine again. With metaboism like mine, I simply cannot afford eating most of those deliscous meals you prepared, but I can maneuver and prepair them with less calories, it takes meal planning in my case, which I stopped doing all together, because it gets depressing at some point to have to eat only certain type of foods all your life, if you want to fit in your last year's clothing. You step off the path to have a piece of a good home baked bread or a good bowl of rice pilaf without having to eat 5 cups of veggies (lettuce and other boring stuff like protein shakes) every single day... and very quickly, 20 pounds later you realize that you do need to go back to meal planning and prep. Thank you for reminding me. Cooking is or should be a wonderful, comforting thing... The way you show it in your videos! ✨✨ I definetly will try one of these! Thanks!

I happen to have everything on hand to make the sweet potato chili. Good one for this weekend as temps are dropping down again. Plus a good one for those who are observing Lent and going meatless. Vegetarians also. The breakfast burritos are , like you say, good for anytime. If you don't have anything ready for dinner, but come home hungry and tired, these would definitely get the job done. I like the idea of the marinated chicken in the freezer. When you don't feel like cooking too much you can haul one of these bags out of the freezer, put in baking dish, and into the oven. I wonder how would work on the grill after a day of gardening for example. Accompanied by one of your signature cocktails? I noticed that you are serving one of my favorite wines Coppola Claret. Wonderful by the beautiful fireside. Nice to see the cats relaxing and lounging around the house. Thank you for the great food prep video. I know what I need to do now. You just gave me the most wonderful idea. I am diabetic. So I got my grill out. Sprayed it with Pam. Took my egg beaters, mixed in cinnamon, sugar, (stevia) and vanilla. Took my cinnamon bread, (1 carb), and made 8 pieces of French toast. I’ve done this before. It’s delicious. I use light syrup. Barely any carbs. And put it all in the freezer. When it’s cold, I’ll bring it out and package it in 4 zip lock bags. There’s my breakfast for our mornings. ❤️❤️
The way I make special French toast: in case you were wondering, LOL + use croissants, (even stale they are VG), sliced in half + soak in egg custard. I add zest of an orange and fiori di sicili (optional but so delicious, I think it is not optional) + cook off. (I use a griddle also) + a few sliced strawberries on on side compliment this nicely, you get an orange strawberry flavour that is yummy
The recipes you introduce always inspire and delight. I very much enjoy getting freezer meals ready ... one day of cooking and several days doing other things but still having awesome meals ready. Love it.

Those breakfast burritos are a winner! I sometimes use ground turkey breast and with onion and cheese. Must use breakfast strips as I cannot eat real bacon. Comes out delicious! I love the egg and " bacon" version too and will plan to freeze a bunch. Thanks for reminding me of great meals that are freezer friendly ~ Diane

Great ideas. Thank you. I wouldn’t of thought about making scrambled eggs and bacon ahead of time. The breakfast burritos would be nice for breakfast. Maybe one could freeze them partially, in a single layer, on a tray. Then, they could be easily pulled out one by one, without sticking/freezing to each other. As I love McDonalds sausage and egg McMuffins, perhaps I could expand on your idea, and make some of them ahead. While I do not care for sweet potatoes, the chili looked delicious. The marinated chicken idea makes sense for me. I too often may decide to marinate chicken for dinner, but do not have enough time for the marinade to penetrate the chicken thoroughly. This way, I wouldn’t be caught off guard. ☑️
Kevin, this came at the perfect time for more burrito ideas. MY husband and I stopped at a local Mexican spot in Yuma that had the most delicious burritos. She used chorizo for the meat part and diced cooked potatoes. She used butter brushed over them and browned in a skillet. They do freeze very well. I make these for my baseball player along with eggnog waffles for his breakfasts. Happy March!! 🌷🧇
Am from Yuma, and there are some good burrito places in Yuma, one is Chile Pepper. They are as good as the chorizo people use in them, there is certainly a trick to making great chorizo.
I love how all your cooking utensils are so pristine. In the 1980's, I was quite fond of Visions cookware. Made by Pyrex, they were tough, heat-resistant glass. They lasted over a decade. These days, I use cast iron for most things.:)

Great ideas. Thank you. I wouldn’t of thought about making scrambled eggs and bacon ahead of time. The breakfast burritos would be nice for breakfast. Maybe one could freeze them partially, in a single layer, on a tray. Then, they could be easily pulled out one by one, without sticking/freezing to each other. As I love McDonalds sausage and egg McMuffins, perhaps I could expand on your idea, and make some of them ahead. While I do not care for sweet potatoes, the chili looked delicious. The marinated chicken idea makes sense for me. I too often may decide to marinate chicken for dinner, but do not have enough time for the marinade to penetrate the chicken thoroughly. This way, I wouldn’t be caught off guard. ☑️
Yoy can make them with squash, it is not as sweet as sweet potatoe

Kevin, this came at the perfect time for more burrito ideas. MY husband and I stopped at a local Mexican spot in Yuma that had the most delicious burritos. She used chorizo for the meat part and diced cooked potatoes. She used butter brushed over them and browned in a skillet. They do freeze very well. I make these for my baseball player along with eggnog waffles for his breakfasts. Happy March!! 🌷🧇
Am from Yuma, and there are some good burrito places in Yuma, one is Chile Pepper. They are as good as the chorizo people use in them, there is certainly a trick to making great chorizo.

In the 1980's, I was quite fond of Visions cookware. Made by Pyrex, they were tough, heat-resistant glass. They lasted over a decade.
These days, I use cast iron for most things.:)
