I have a Scotsman Prodigy that only freezes the bottom half of the coil so the ice thickness sensor never sees the ice. Do you think that it may be low on refrigerant? I've been through everything, cleaning, de-scaling, testing sensors, etc. but it still only freezes at the bottom. The ice gets very thick down there until it gets a Max Freeze Time Shut Down fault.
It depends on your water quality. A lot of water filter providers will test your water quality for free in hopes that you’ll purchase a filter from them. Ask around, I’m sure there’s a company close to your location.

Sounds like you’re either low on charge or your TXV is not metering the refrigerant properly.
