You can freeze peeled beets that are chopped up without blanching.

I was wondering this as well! I heard cooking them first will take away some of the nutrients. I usually cut my beets into chunks and roast them but I wondered if I could cut them into chunks and freeze them raw, and then when I’m ready to use them I can just take them out and roast them? I don’t know😅

Do you have to peel?

You can peel the roasted ones before or slip the skins after they are roasted. Peel them if using the microwave method. Boiling method unpeeled. Peel the raw ones.
