Hi Sandy! Thanks for watching and asking! Your beets are starting to age and need to be used or preserved immediately. If they are REALLY soft, smell bad, or show signs of mold, it's probably best to toss them, unfortunately. Act fast!! I hope this helps. Take care :)
Hi! That's an excellent question! It's my understanding that SOME foods that have been frozen can still be pickled. Since I have not done this, I can't say for sure about beets. It's worth a try, though. I would start with a very small amount, just as an experiment to see if it works. Then you'll know for sure without sacrificing too many if they don't turn out well. If they do turn out well, then you could do whatever size batch you want! Go for it :) Thanks for watching and asking :)
Can't they be frozen raw and if cook, can't they be peeled before you cook them? It only takes a few hours for the leaves to wilt, doesn't affect the beet itself. So unless you tend on eating the leaves, all good.. bit of dirts not going to kill us. I grow my own organically, or buy organic
Hi Karen! If preferred, beets can be frozen without blanching first. However, it's my understanding that they will have a better quality if cut first (sliced, diced, or grated) rather than being frozen whole, before being frozen. Yes, beets can be peeled before they are cooked. This would be especially helpful if you are roasting them. Good for you for growing your own beets!! Thanks for watching and sharing :)
Hi Malcom! I have not tried juicing frozen vegetables of any type. Any juicing I've done was all with fresh fruits and vegetables. From your question, it sounds like you're already juicing frozen beets. Blanching them first before freezing will help them to keep longer in the freezer, with a better quality. Since they will have been slightly cooked (through blanching), it may actually make them easier to juice, possibly yielding more juice. I can't swear by that since I haven't done it, but I speculate that will be the case. At any rate, I doubt it will hurt the juicing process. If you're looking for "live" enzymes in your beets to be in your juice, juicing them fresh would be best. There will still be SOME enzyme activity if they are frozen withing being blanched. I don't see why not. Being whole, they will take a lot longer to thaw out when reheating them, vs sliced beets. But it should still be do-able. I hope this helps! Thanks for watching!
