I cannot tell you how much I personally appreciate how you utilize the entire fish. People have given me a hard time in the past for scraping meat off carcasses or taking the collars but I can't stand the idea of wasting it. I'm jealous of you not having to freeze fish! Where I live its very seasonal so if I want to eat fish year round I have to stock up and freeze fish to get by.

I don’t know how realistic it would be to hit those lookdowns while spearfishing (they’re small and quick, but have a huge broadside profile), but if you can hit them with the spear, I’d take those nearly 100% of the time over snapper or grouper. They are absolutely delicious, and are non-regulated here in FL, so you can harvest enough for quite a few dinners. If you’ve never had them before, please try them. If you have tried them and don’t care for them, then more for me! 😜

    • @KeyWestWaterman

@@KeyWestWaterman you won’t regret it. As a bonus, they’re super easy to clean, as you can just head/gut them, and cook them whole. You can filet the larger ones, although not really necessary. And don’t forget that huge chunk of meat on the forehead, just like a pompano 🍺
