Gluten-Free, Vegan Chocolate Chip Cookies

  • Who doesn’t love a good chocolate chip cookie? I know I do, and here’s the gluten-free, vegan, reduced-sugar recipe I use when my girls and I want a sweet treat. 💚OPEN FOR MORE💚

    RECIPE: "Gluten-Free, Vegan Chocolate Cookies"
    Adapted from: "Chocolate Chip Cookies" from Sift, Stir, Savour: siftstirandsavour.com/2013/02/...
    Makes 15-18 cookies
    Ingredients:
    1 cup brown rice flour
    1/4 cup tapioca flour
    1/4 cup potato starch
    1/2 tsp. baking soda
    1 tsp. guar gum or xanthan gum
    1/4 tsp. salt
    1/3 cup peanut butter (I use Trader Joe's Creamy Organic Peanut Butter)
    1/3 cup unsweetened organic applesauce
    1/2 cup Lakanto sweetener (amzn.to/3cE8HN8)
    1/4 cup rice milk or other non-dairy milk (I use "Trader Joe's Rice Drink")
    2 tsp. vanilla extract
    1/2 cup chocolate chips (I use Lily's Sweets Baking Chips that are stevia-sweetened amzn.to/3dpdxNo)
    STEPS:
    1. Combine brown rice flour, tapioca flour, potato starch, baking soda, guar gum, and salt into a bowl and whisk together.
    2. Combine the peanut butter, unsweetened applesauce, and Lakanto sweetener (or other sweetener) into another bowl and mix together.
    3. Now add ¼ cup rice milk and vanilla extract and mix together again.
    4. Now combine the wet ingredients into the dry and mix to combine with a wooden spoon.
    5. When fairly mixed together add in the chocolate chips. If dough seems to dry to combine together add some rice milk, one tablespoon at a time, until it is not falling apart.
    6. Then using your hands or a cookie scoop, measure out about ⅓ cup of dough and roll it into a ball. Flatten the ball slightly and then place on a greased cookie sheet.
    7. Continue for the remaining balls of dough. You can place the cookies closer together than traditional cookies since these cookies will not expand, and instead they will remain in this shape while cooking.
    8. Then bake for 10-12 minutes at 350 degrees.
    9. When the cookies are done, remove them from the oven and let them cool for 5-10 minutes.
    10. To save the leftovers, keep them in an air-tight container so they won’t dry out as quickly.

    Yay! I just have to shop for some missing ingredients (like tapioca flour, rice flour and xantham gum!) and I am ready to make those cookies! I have an aunt-in law who is allergic to gluten so for every recipe I learn, I like to know a gluten free version. Thanks for this Ashley! x

      Real Life Clean Living I know right?! Ironically, the wooden spoon I used to stir the dough together in this video BROKE the next time I made these cookies...seriously!! LOL, guess all these recipe videos are just putting them to the test! Oh well, time for upgrades!

    Oh, we totally frost cookies here as well. The ones in the store do, so why not? Haha :) Love this video, but can you make these with only using the rice flour and leave out the guar gum? Thank you so much :)

      CompletelyRandomlyMe Glad I'm not the only one! And you're right, the stores frost them, so why not?! ( : I'm not sure if the recipe can work with just brown rice flour and no guar gum...sometimes gluten-free recipes are pretty finicky and can get messed up with even the slightest change. But you can still give it a try...and see what happens, you never know! ( :

    Hey Ashley! sorry for all the questions but I was wondering if you have any healthier dessert reciepes that you enjoy making?! I'm needing some ideas to bake with..... I myself try to avoid added sugar as much as possible and now use Lakanto to replace sugar. Do you have any suggestions on what to use for a liquid sweetener in baking? Thanks!

    Just wanted to ask how much of this sweetener do you buy in a normal week/month? I know you have said in a previous video that it's expensive, I'm from the UK and on amazon uk it is £35 which is way more in $USD. How do you justify using it...or do you use it interchangeably with coconut sugar?

      Kim Joyce I try to only get one a month, but when I'm doing recipe videos like this one, sometimes I need 2. Pricey I know, but I try to budget for it and use it accordingly. Sometimes I also use stevia powder (much cheaper), and brown rice syrup too.

    Hi....can I use arrowroot instead of patato starch? Or another 1/4 cup of tapioca flour? Xxx

      Yes, I believe arrowroot should work okay, or cornstarch too. Anyone else try swapping out the potato starch?
