As a mango grower from the region of the world where the mango actually originates from, I can tell you this. when you cut mango and its juice donesn't run down from your hand to your elbow, it is not a mango. Call it papaya or whatever, but not a mango.

cut down the broad sides of the seed, leaving you with 2 portions for using a spoon on. grab the knife and mango core, and slice slithers of remaining mango meat attached to the seed.
try little table salt to offset the sweetness for a little electrolite intake

thats not how we eat it. cut it in half and just eat it all messy like. or peel it and cut the pieces up and put it in apple cider vinegar with cayenne and black pepper (or tajin)

There’s two ways to eat a mango.
1) unripe mango: if it’s hard and sour you cut it into rods and pop some salt on it, maybe some chilli powder if you’re feeling spicy
2) overripe mango: you want it to be messy, stringy goo inside. Wash, eat like an apple, skin and all. You wanna have some tissues on hand because your face is going to be a state afterwards.
What to do with a ripe mango? Mourn the loss of your tasty sour mango and wait for the overripe mango to happen
