Ingredients
1.3 lbs chicken thigh(sliced)
4 oz panang curry paste
14oz coconut milk
4-5 kaffir lime leaves
1 tbsp palm sugar
1 tbsp fish sauce
Red chilies
Instructions
1. Heat half of 14oz can coconut milk in a deep pan on medium heat for 2-3 minutes.
2. Once slightly thickened, add curry paste and stir. Once incorporated, simmer on medium low for 5-6 minutes until the coconut milk makes a bright red oil with the curry paste.
3. Add sliced chicken thigh and stir so the chicken is coated in the curry mixture.
4. Add coconut milk, and 3-4 torn kaffir lime leaves.
5. Cover and simmer on medium low heat for 10-15 minutes until the chicken is fully cooked through. Make sure to occasionally stir so the bottom doesn’t burn.
6. Season to taste with fish sauce and palm sugar.
7. Garnish with minced kaffir lime leaves, sliced red chillies, and enjoy with hot rice.
You forgot the hour it takes me to find these ingredients in various Asian markets
thats excluding the traffic it takes to get to the next market cuz the ingredient wasnt there 😂

That’s a very authentic Thai panaeng curry recipe. No bell peppers, no other vegs, only finely sliced makrut leaves and red chilli. Excellent! 🎉
Authentic panaeng curry has Thai basil.

My sister and I just made this today and OH MY GOOOOD. Even though we took 3x longer than you did it tasted so much better than getting takeout. Only used 1/3 of our paste and it made around 6 servings!! Will definitely be making this again.

Try cauliflower rice. It's almost as good if you're on a cut, worked for me.
@@codidevlugt2153the rice isn’t the issue, it’s the coconut milk and oil in the curry. I wish I could eat this but I’m on a deficit as well. It won’t be as good if you substitute the coconut milk, or the high sodium ingredients 😅
