    I'm enjoying your vids. Real recipes, a non-obnoxious chef, and good information. My Thai wife is an excellent chef and having attended French culinary school, I'm no slouch in the kitchen either. Keep it up!

    Crazy, I just went through your videos and instagram yesterday after I was visiting Brooklyn and remembered you do popups out there! Bummed I missed it... I'm going to give this one a shot.
    Your cooking videos are easily my favorite videos on YT and anything else for that matter! Love to see the mushroom base, after going plant-based I've found that my addiction to thai food was curbed, so this is lighting the fire!
    As shrimp paste and fish sauce are irreplaceable... Do you think sticking with golden mountain for salty aspect and maybe mushroom powders for the umami would be a good alternative? Thanks for all you do Derek!!

      Ah thank you so much for the kind words Alex. And you got it, those are what I would do for umami base. Light soy would be great as well. And yes mushroom powder or simply MSG. Or you can even build a stock with dried mushrooms and tomatoes to make an umami base and use that as your liquid. Thanks again!
