As to how the Gingerbread Man got his legs back... you can clearly see where the cracks are "stitch marks" made with icing where his legs connect to his body. They iced him back together and I think that's hilarious.

I will continue to believe that fairy godmother is the one who cursed Fiona then suggested she he locked in a tower guarded by a dragon to await her true love specifically to have her son prince charming save her, then she would believe hom to be her true love, then he gets to be king. She may even have set it all up when she turned Harold from a frog to a human that he would only ever have one daughter and that she would be cursed.
It's kind of like those witches who request the first born child as a price to be paid for their services. It's pretty much that except the parents get to pretend the child is still theirs.
