Thank you for the step by step canning video making pepper relish! You did an excellent job explaining everything a newbie like me needs to know and understand about canning! Each step is demonstrated very clearly from beginning to end of the canning process. I feel confident that I could can peppers safely and correctly after watching your video. Heading to my local Farmer's Market today to buy some colorful mild and hot peppers. Can't wait to taste my completed relish! Yours looks yummy! These would make very pretty and delicious gifts for family, friends, teachers, and new neighbors! ❤
Excellent video. Shows a real mom canning for her family,wonderful. I canned w my mom as a kid and needed this refresher badly. Thank you. Have my peppers chopped ready to can tomorrow.
I just made pepper relish yesterday. But I coarsely chopped my peppers and onions, added a little vinegar and sugar, then cooked that til it rendered down a little. Then I drained it, put it in a food processor to dice the mixture up more finely. Put it back in the pot, added vinegar and sugar again. Added some crushed pineapple towards the end, then canned it. Turned out really good!
I’ve never done that, but it sounds like a yummy idea! I don’t see any reason from a food safety perspective why this would be a problem. The acid you need comes from the brine since peppers are considered a “low acid” food. And onions have about the same pH as peppers. Just keep the size of your pieces consistent so everything is heated through evenly.
