I thought he was waiting for bubbles to form in the upper part of the pancakes but I only saw some tiny ones on the edges prior to cinnamon sugar being added. So since we don't flip them (and as stated before since they are covered), this is why I think we need to use low heat. Wait for pancakes to slightly crust on the bottom and cook throughout. Poke it with a fork to test? Don't forget to cover it in your powdered sugar mix! Throw glasses with purpose upon ingesting!
Alright here's the recipe for those who want to make this Ingredients for Batter - 1 egg - 1 & 1/4 cup of milk - 1/4 cup of vegetable oil - 1 & 1/2 cup of flour - 2 Teaspoons of baking powder - 1 tablespoon of sugar Ingredients for Cinnamon sugar - Four tablespoons of softened butter - 1/4 cup of sugar - Two teaspoons of Cinnamon - 1 tablespoon of the pancake batter Ingredients for Icing - Two cups of powdered sugar - Tablespoon & half of milk 1. Mix all of the ingredients ( Batter, Sugar and Icing in different bowls incase your are a little dumb like me) 2. Get an pan and cover the pan in butter until bubbling 3. Add the batter 4. Cover the pancakes until you see bubbles 5. Take off the lid and add the cinnamon sugar on top of the pancakes 6. Put back on the lid and let it steam for 4-5 minutes (Add 1 Tbsp of water to the pan) 7. Take out the pan onto a plate and top with frosting
Tips if you're following this recipe *use three times the amount of baking powder if you're not using baking SODA (which was used in the original video) *watch them because the unflip side will cook very quickly if you're making small pancakes, if that happens the cinnamon sugar would just sit and spill at the top *Lower your heat so that it get half way done while still not being crispy and golden at the bottom (account for the steaming part)
Hey, I've a way for you to try pancakes. You can use bisquick, or any other pancake mix, but use about 2 cups of mix, 1.5 cups of milk, 1/4 cup olive oil, and 2 eggs. Mix well, you're going for a thick consistency, add more milk or more mix depending on how runny it is, you can play around with how much you actually use, even if it's the 1 cup mix, 1 cup milk, and 1 egg recipe, though I still add a bit of olive oil either way. Now you need a charcoal grill with an attached woodchip box for smoking that connects to the main grill. Or you can have the woodchips sit right on the coals, but this will make it harder to cook later. Anyway, get a cast iron grill plate, just make sure it's smooth, and that it's seasoned well. Get a bag of pecan wood chips, let them soak in water for at least 30 minutes, save about 1/5 of the bag dry. Fire up the coals in both the main grill and the smoker. Once super hot, place the dry chips in the smoker box, with a couple of handfuls of wet on top. Wait a few minutes for them to really start smoking. Now, open up your main grilling chamber and pour the batter onto the cast iron, and close the lid. Wait about a minute, open it up, flip it, press it down just a bit, these things are going to fluff up like crazy, and close the lid again for another minute. The first one you take off, rip apart to make sure it's cooked all the way through, it can be hard to tell the first time. Take off when you're happy with the color, put salted, grass fed butter on them, then pure maple syrup, then put in the microwave for 20 seconds to lightly heat everything to the same temp, and enjoy. The charcoal, maple, butter, and pecan flavors when the mix together is amazing. Also watch your face when cooking, you want a ton of smoke going through, and if you don't get a small cloud when you open the grill, you might need some more chips. And cause charcoal costs so much, might as well cook some other meats while you're at it. (bacon and eggs are really good to follow up with)
Made this today. Used brown sugar, almond milk and canola oil instead. Also, he gets the proportions for the frosting all the way wrong. Turned out good, but the pancakes lacked flavor bc of the almond milk. I almost recommend buttermilk to be honest. As for the cinnamon swirl, they really need to emphasize that you add it to the pancakes as soon as you see it start to bubble, don’t wait for it to have several bubbles. You see a bubble, you add the swirl. If you wait too long then the batter gets too firm, the swirl melts, falls off the pancake, and caramelizes in the pan. Surprisingly not too sweet, but if you eat too much you get a sugar coma.

....Okay, now to try a grain-free, dairy-free, sugar-free (re: my allergies and diabetes safe) version....
