    I use my airfryer a lot. I like my wedges crisp so i add 1/2 tsp cornstarch and 1/4 tsp sugar after i toss the potato wedges with skin. I met a chef who told me about the sugar trick. that actually gives the wedges a lovely golden color as it carmelizes the wedges. Nice video Colt

      Thank you for sharing, may I ask how you mix the sugar & cornstarch? You mix them up with wedges before putting them in the fryer?

    • @shusha50
      @shusha50 2 года назад +41

      @@primavera919 yes, I add a little oil to the potato wedges. I ad a mix of cornstarch and sugar, salt and pepper and toss in the barely cooked wedges pre tranferring it to the airfryer. Good luck Just made spme today with golden yellow potatoes from Canada. Let me know if it turned out okay.

    Great recipe, thank you for posting! He instructs to peel the potatoes , but I leave the skin on and I would argue they are tastier with the skin on. Depending on the size of the wedges, I typically cook them at 400 degrees for 12 to 15 minutes. I would check them after 12 minutes and take a bite to assess, and cook longer as needed. After making these I will never make frozen french fries in my air fryer again. Just a wonderful recipe!

    Great videos, Coit! Regarding "putting the potatoes in the ice bath/ water" is because if potatoes are cut and kept in the open, they turn brown/ black/ or get a layer just like when apples are kept in the open after being cut. That's because they have starch in them and and this process is called oxidation. When starch is exposed to oxygen, it turns gray/ brown/ or even black. Though they are completely edible, we soak them in water to avoid this. Water also washes away the starch, so it makes it little less "starchy" and we can feel better about eating those carbs! :D

    Very nice presentation. I really enjoyed them and very simple to cook, but 10 to 12 minutes is very optimistic, mine took more like 15 to 17 minutes, but well worth the wait. When cutting the potato into strips cut the potato in half and then put it cut side down on the cutting board and cut the strips from there, much easier. I cut the strips in half just to get more of the delicious crusty surface, but that's a personal choice. I don't think I will ever roast potatoes in the oven again.

    my rule of thumb is, if I think something is "done" in the air fryer, I put it in for an extra 5 minutes. That time is the "magic time", and they always come out in a "levelled up" state that is far and beyond my expectations. this works for anything in the air fryer

    I’ve soaked my potatoes in cold water when making fries (oven or deep fry)!for many years and it helps! I will try without soaking when my air fryer arrives tomorrow!!!

      @@zoilarivera8866 I did make these potato wedges and they were good. I also tried without soaking in cold water and I think they are only slightly crispier when soaking (not much)

    Made this tonight. I went 2 more minutes than he recommends, a quarter teaspoon more of each of the seasonings. Otherwise this was great!!

    I like how you don't wash/soak/dry those potatoes and have a great result. I can't ever get those tremendous time consuming pre-cooking manipulations.

    These are really good , but for me you really need to soak them in cold water for 30 minutes then rinse them out to get rid of the excess starch, before you cook them. You'll also need an additional 5 to 10 minutes if you have a big potato, and want them extra crispy. Perfect snack food. Thanks for posting Coit. Cheers....

      Do you find that makes them crisp more? I saw another video where you hot bath them in a vinegar.
      I love jojo's but am still avoiding buying an air fryer

      @@anothersomebody8195 Yes, I think soaking them in cold water and drying them out makes them more crispy. They also just taste better.
