Competition coffee: Light roasted bean from Guatemala, washed Bourbon and Caturra
Tuomas used Third Wave Water Formula: Formula 2: 100% Espresso
Steps:
1. Start by grinding 18g of coffee (medium course / 27 clicks on comandante according to Tuomas)
2. Rinse 2 paper filters with hot water
3. Use the paddle to get the air out
4. Set your kettle to 80°C
5. Add your coffee and give it a shake to distribute it evenly
6. 0:00-0:10 Add 50g of water within 10 seconds
7. 0:10-0:15 Stir very gently 3 times back and forth
8. 0:15-0:30 Add 150g of water within 15 seconds
9. 0:50-0:55 Stir very gently 3 times back and forth
10. 1:00-1:05 Attach the filter cap
11. 1:05-1:35 Push the excess air out and wait
12. 1:35-1:40 Put on the pitcher
13. 1:40 Flip the aeropress
14. 1:40-2:00 Start plunging for 20 seconds
15. 2:00-2:30 Swirl the coffee
16. Pour from altitude to another pitcher
