I learned recently that it was Gordon Ramsay that actually decided to stop doing kitchen nightmares in the US and UK, because the people never stuck with his advice and ended up closing as a result.
A lot of the restaurants were in so much debt that even when they did stick to his advice it was too little too late unfortunately but there are some success stories he can be proud of.
I want to see Pewds watch the Burger Kitchen episode, the fact that the chef gets genuine redemption and the idiot owners get called out so hard is just amazing

The thing about menu size is really dependent on what kind of restaurant you're running. Like... Taco Bell has a pretty big menu (its not all posted on the menus outside), and so does Waffle House, but that's because all the menu items are made out of the same types of ingredients, for the most part. But at a restaurant like this, and how she's made the menu, she's put several different cuisines on there, which require trips to different shops/multiple supplier deliveries, much more fridge and freezer space, and much more knowledgeable staff to make those different dishes /well/. I'm not shitting on the staff; I'm sure if they were given better conditions and everything they could make some banging calamari, meatloaves, pizza. Their manager is just so piss-poor it's frightening.

In defense of Jimmy, running a line during a rush is tough, it can be extremely stressful juggling so many things at once and getting everything timed out properly. Not everybody is cut out for it, you can be a great cook and still not have the skill set to manage a line, so I can't fault someone that was thrust into that position for not doing a great job, cuz it's a hard job.
Running a line can be SO stressful !!! People don't realize that you can be working on 4 different dishes at once, and they all have a different cooking style. I never really got there, but on dinner rushes at a pizza place SUCKED for me. It was constsntly 10+ random pizzas every minute and I'd get yelled at for the oven backing up....
16:40 Theres actually a ted talk about things like this. In asia the level of skill required to own a restaurant is incredibly high. They know hundreds of dishes. Makes them perfectly and sometimes double or triple dishes at the same time. And they get paid minimum wage. Thats why a lot of asian food is great. Be it thai. chinese food or japanese food or korean. They have the competition. but they also have the skills. If its an actual legitemate shop they usualy know these recipes by heart thats why there are so many. But compared to western restaurants. Their menu often stays static. No rotation. But they have enough variety to keep people interested.

I give Rico props for being one of a number of (co?)owners that were totally honest with Gordon about how screwed they had gotten because of their restaurant. He didn't hesitate to tell Gordon how bad his situation was and he chased the man down to try and keep him onboard to help. What a bro.
Also his insult to Abby goes hard fr; this was during that era of US K.N. where he was playing up the anger before he did simmer down in later seasons

I really like revisiting these episodes from the eyes of someone who has never seen it. Also the nice follow ups of what happened to the restaurants.
I feel like we all know a person like that lady, or at least we knew. These kind of people are obnoxious, can't take criticism, take everything personally and are pretty much delusional... Most realise that trying to help or give feedback and so to people like this is useless and just give up as it tends to be a huge waste of time and energy on top of them being ungrateful.

The thing about menu size is really dependent on what kind of restaurant you're running. Like... Taco Bell has a pretty big menu (its not all posted on the menus outside), and so does Waffle House, but that's because all the menu items are made out of the same types of ingredients, for the most part. But at a restaurant like this, and how she's made the menu, she's put several different cuisines on there, which require trips to different shops/multiple supplier deliveries, much more fridge and freezer space, and much more knowledgeable staff to make those different dishes /well/. I'm not shitting on the staff; I'm sure if they were given better conditions and everything they could make some banging calamari, meatloaves, pizza. Their manager is just so piss-poor it's frightening.
Exactly. They have large menus like that because it's the same ingredients, just in a different order. There's a pizza/takeout place down the road from me and they legitimately have 100 things on the menu, but they're basically all different dishes. They have every seafood, and every type of meat. They're weird, but goood af

True. I've been to some Chinese restaurants that have soooooo many different dishes but if you look there are a lot of repeating ingredients. Noodles, so much rice, bbq pork, pork belly, beef pieces, beef brisket, assorted vegetables... it's like an assembly of ingredients but different ingredient combinations picked depending on the dish.
The funny thing is, is that she hired Gordon super confident she would pass but then called him a stuck up bastard and other things when he was being honest

Good on abby for stepping up and owning her stuff, thats the main step to rebuilding the restaurant, if she could get out of her own way and be open to others opinions that place could thrive, get a production line moving in the kitchen and get a proper head chef, its not as hard as people make it

I love watching the catharsis the waitstaff in these places experience finally being able to be honest.
In defense of Jimmy, running a line during a rush is tough, it can be extremely stressful juggling so many things at once and getting everything timed out properly. Not everybody is cut out for it, you can be a great cook and still not have the skill set to manage a line, so I can't fault someone that was thrust into that position for not doing a great job, cuz it's a hard job.
Running a line can be SO stressful !!! People don't realize that you can be working on 4 different dishes at once, and they all have a different cooking style. I never really got there, but on dinner rushes at a pizza place SUCKED for me. It was constsntly 10+ random pizzas every minute and I'd get yelled at for the oven backing up....
They did Jimmy dirty. He seemed too inexperienced to be a head chef
That happened in season 1 at Lela’s. The guy who took over as head chef was overwhelmed and I think he might’ve quit over it, either that or he left.
16:40 Theres actually a ted talk about things like this. In asia the level of skill required to own a restaurant is incredibly high. They know hundreds of dishes. Makes them perfectly and sometimes double or triple dishes at the same time. And they get paid minimum wage. Thats why a lot of asian food is great. Be it thai. chinese food or japanese food or korean. They have the competition. but they also have the skills. If its an actual legitemate shop they usualy know these recipes by heart thats why there are so many. But compared to western restaurants. Their menu often stays static. No rotation. But they have enough variety to keep people interested.

I think it's because in Japan, alot of the foods on the menu pair together. It might be a big menu BUT it's all from the same recycled 10 or 15 ingredients with similar preparation steps. It's easy to manage as opposed to a menu of 50 items all with their own special ingredients and preparation requirements.
