There is no substitute for the flavor and quality that butter gives home baked goods, but when you are in a pinch look for a high fat baking margarine, many brands have 70% fat, the higher the fat the better the taste and texture. When using baking margarine I add BARCO - Butter vanilla clear essence. I add a few drops to the cake and icing and it enhances the flavor beautifully, works great for rusks to. Cost +- R27.00 for 30ml and you use 10 to 15 drops as you desire.
Gaja’s TREAM Bake Oven @ 180c pre heated Your need: a square baking tray, greased and floured Bake for +- 30 to 35 minutes 200g soft butter 1 ½ cup of sugar 2 Table spoons of oil
Cream for 5 to 6 min till light & fluffy, now add 4 eggs at room temperature add while mixing 2 at a time, now add 1 table spoon of vanilla essence and mix, To this add in 2 alternating batches (wet and dry ingredients) the following checking the consistency. Scrape down the sides between mixes. 2 ½ cups of sifted cake flour 2 ½ teaspoons of baking powder 2/3 cups of milk, room temperature ¼ cup of water Don’t over mix, just still all is incorporated. Spoon it into your baking dish and bake. Butter cream icing: 150g soft butter, whisk till fluffy +- 2 min, add 2 cups of sifted icing sugar, add slowly into butter mixture and whisk, now add 1 Table spoon of milk 1 teaspoon of vanilla essence Whisk at high speed for +- 3 minutes till light & fluffy. Once cake is completely cooked spread with icing and decorate with rainbow sprinkles
