    Ingredients:
    1 lb pork loin chops, thinly sliced
    1 cup baby corn, sliced in half lengthwise
    1 cup bamboo shoots, sliced
    1 green bell pepper, thinly sliced
    2 large carrots, julienned
    4 green onions, cut into 1-inch pieces
    2 tablespoons avocado oil
    3 cloves garlic, minced
    1 inch ginger, minced
    Sauce:
    1/4 cup soy sauce
    2 tablespoons rice vinegar
    1 tablespoon brown sugar or honey
    1 tablespoon cornstarch
    1/2 cup chicken broth or water
    1 teaspoon sesame oil (optional)
    1 teaspoon sriracha or hot sauce (optional for some heat)
    Instructions:
    Prep the Ingredients:
    Thinly slice the pork loin chops.
    Slice the baby corn lengthwise.
    Slice the bamboo shoots.
    Thinly slice the green bell pepper.
    Julienne the carrots.
    Cut the green onions into 1-inch pieces.
    Mince the garlic and ginger.
    Make the Sauce:
    In a small bowl, combine soy sauce, rice vinegar, brown sugar or honey, and chicken broth or water.
    Stir in the cornstarch until well mixed. Add sesame oil and sriracha if using. Set aside.
    Cook the Pork:
    Preheat your cooker to 375°F to 400°F (190°C to 204°C).
    Heat 1 tablespoon of avocado oil in a large skillet or wok.
    Add the thinly sliced pork and cook until browned and cooked through, about 4-5 minutes.
    Remove the pork from the skillet and set aside.
    Stir Fry the Vegetables:
    In the same skillet, add the remaining tablespoon of avocado oil.
    Add the minced garlic and ginger, and cook for about 30 seconds until fragrant.
    Add the carrots and cook for about 2 minutes.
    Add the baby corn, bamboo shoots, and green bell pepper. Stir fry for another 3-4 minutes until vegetables are tender-crisp.
    Add the green onions and cook for another minute.
    Combine and Serve:
    Return the cooked pork to the skillet.
    Pour the sauce over the pork and vegetables.
    Stir everything together, cooking for another 2-3 minutes until the sauce thickens and everything is well coated.
    Serve hot over steamed rice or noodles.
    Tips:
    Prep Ahead: Have all your ingredients prepped and ready before you start cooking. Stir frying goes quickly!
    Variations: Feel free to add other vegetables like snap peas, mushrooms, or broccoli.
