    I substituted canola oil for beef tallow and my cheesesteaks went to the next level. It makes a HUGE difference.

    This is one of the top two Cooks I've seen! Philly Cheesecake is the BEST! ...and on a Quesadilla...Heaven on Earth!! Totally amazing! I take a shortcut sometimes and actually use good quality roast beef and griddle it up with the veggies and cheese...thanks and keep those cooks coming!

    Hey guys,
    As a resident of the Quaker State who lives about an hour from Philly I will tell you that the way to avoid the scrutiny is to just call it a cheesesteak if it's not like those in Philly. This should eradicate approximately 99.9% of the hate but, you will still have to deal with the .1% who just want to be difficult. I loved what you did and keep on killing it. Thanks for sharing.

      Wow, so much this!! Thank you so much for the love and support, and you said it best!! Here’s the thing we really try to explain, but we know purists get triggered - we love and have mad respect for a true Philly - in nearly every restaurant outside of Philly that wants to incorporate a cheesesteak inspired dish, they call it a Philly. We have a local Mexican restaurant that has a Philly Cheesesteak chimichanga. We have another with Philly cheesesteak egg rolls. I guess the correct term would be “Philly inspired” - because it’s what it really is. Because of the draw the “Philly” label brings, it has way more grab than just a cheesesteak - hence the reason everyone uses “Philly” in the title.
      We really appreciate you breaking it down in a meaningful way man, much love and respect!💪💪🤙🤙

    1:26 Thank you Waltwins for what you have at this time. Because a real cheesesteak do not come with green peppers!! Man, we people from Philly nearly have to get in some fights with people who say that green peppers comes on a cheesesteak.

It was so hard to try to explain while paying respect to the original - we wanted to honor the Philly, while still keeping some authentic “southwest/Mexican” flavor with the green pepper - we try to show it, but still getting a ton of heat from our peeps. We understand but mean no disrespect for the the truth Philly: rib-eye, provolone (or whiz wit!), and white onion. Much love brother!🤙🤙

      If you want a tip on making the fried onion and green peppers taste better, use Berf Tallow instead of regular oil. It gives the onion a much better taste, so good that you would want to eat the onions as a sandwich by itself.

    Great cook guys! Glad to see the respect for the cheesesteak. I agree with the choice of using ribeye opposed to sirloin. I remember going to the corner deli as a kid and getting shaved ribeye for my mom for cheesesteak.

    OMG, I literally made these for lunch today, that's amazing! I was going to get some hoagie rolls (which are hard to find here), but the place I get them was out, but I had some tortillas and thought it would be interesting to make quesadillas. I wish I would have had shaved ribeye though, I just have those frozen shaved steak packs from Gary's QuickSteak... not bad stuff and a lot cheaper. I also made a cheese sauce for dipping. They came out great. That is just nuts I happened to do it the same day! I ended up making them inside though because it's too hot outside. Today was the first day of record heat here in the Northwest. It's going to be like Phoenix, AZ here through Monday, and only about 35% of people here actually have A/C. I am lucky to have it! Monday is supposed to be anywhere from 115 to 120. The record for Seattle is 103. Normally it would be in the mid 70's to 80 right now. Crazy stuff. Anyway, Griddle on!! What am I making tomorrow? LOL!

    Gotta agree with both of you. Brett, one could definitely call this a game changer. However, I’m a rather large man and would qualify more like a “three” than a “one.” So my vote counts triple!     Looks amazing! Last night I made Rueben's with a cheese steak style corned beef. It would be great to make a Rueben Quesadilla. Also a local place uses cream cheese in their Quesadillas. That might be an interesting twist

We’ve had some not taste so good, it we don’t put the videos up - we’ve found we don’t want to waste people’s time with cooks that didn’t work (it’s funny, we shot videos today and we explained it 😄😄 - will be in an upcoming video!) - we try to be as honest as we can with our assessment - even if it’s not the best, we try to explain after the small tweaks we would make for it to be better next time. Hope this makes sense!😄😄🔥🔥

    See what ya need to do is make Buffalo Chicken Quesadillas, I would make them for the crew working late shifts around 2am at Race St Cafe in Olde City Philadelphia. Special secret for buffalo sauce.
    I really shouldn't but I'd rather more people enjoy. Add a lil bit of cocoa powder to your buffalo sauce 😁👌🏼👍🏼🔥you will be pleasantly amazed. I would cut up a chicken breast and batter each piece of chicken so they're like little popcorn pieces drop em in the fryer for a couple jawns then shake around in my special buffalo sauce. At this point the Dilla should be on the flat top flip over for a little golden color and then add some shredded cheese and once it starts to melt toss some pico de gallo. Next add the chicken and then put 2nd Dilla she'll or whatever ya call it and once its covered with the 2nd pieces carefully flip the whole thing so you can get some color on the fresher side. My last tip is when it's off the flat top dabble a little blue cheese dressing ( or whatever you prefer)in sort of a zigzag motion for the presentation. All that's left is to cut it like a pizza and there you have your Buffalo Chicken Dilla.....that crew loved when I was working even took care of my customer homie Ol Lou would make him one too.
    Also your wife makes them just like I using 2 Dilla's for each one. Much more food, many more smiles👍🏼

    Awesome cook, dudes. I always leave your videos hungry as a she wolf with 8 pups! I have a tip to share: At the meat case look for chuck eyes...they are the same as rib eye, but are the smaller/ irregular pieces from the end of a rib eye, and sell for considerably less! You're gonna shave it anyway, so big whup if it's not a beautiful big rib eye, right? Same flavor, same marbling, save money, eat more quesadillas! Rock on, my grillin' brothas!
