@@jin0601 can I ask you a question? We really like the crust and texture of these German bread rolls. Can I knead or apply the same method for the no knead Dutch Oven bread. I made it last two weeks. The texture and "elasticity" is no where close to these rolls. By kneading the no knead dough, will I be able to get the nice texture? Thanks so much Jin. Appreciate your reply.
I'm from Germany and can tell you, these rolls are hard to find today. When I was young, a lot bakerys make them. Today, you have to bake them by yourself, to have good German rolls.

@@LongenLongen 可能你的环境湿热,面粉吸水性低,可以先按360克水和面,最后根据面团情况酌情增加。

@@jin0601 我的烤箱比较小,我把你的分量减半。烤的时候,因为烤箱的的温度我还不太熟悉,所以要在最后10分钟就一直要观察调整温度~因为是新手,所以老师的的教程对我来说,真的太简易实用!

These two bread are different. Dutch oven bread is crust outside,but soft and more air holes inside.so you can't knead.

it is about 30 minutes,but it should be rise to1.5 times in size.

How long does it take to prove and what temp do you cook it.
Depends on your room temperature, first prove takes 1-1.5 hours, second prove 30-40 minutes.
425F bake for 20 minutes.

发酵好再化,刀要锋利。可以用机器打面。

Great job 👍 did you remove the baking sheet ( water )on the bottom of oven ? after that, continue baking for 5 minutes.

如果不要做那麼多是不是麵粉水分等等都減半呢?我昨天做了一個,發酵等太久,不知道是不是酵母克數不對…我全部對半砍的比例,而且製作中麵粉太黏一直不斷加粉才做得了…
面团含水量高,湿黏正常,不要加面粉,视频有说,继续揉就可以了。

可以用高筋面粉,如果太稀软可能是面粉吸水性低,可以适当减少水里。
