Hilling Up Potatoes - When, How and Why.

Potatoes are Hilled Up for two reasons and Hilling up potatoes is simply adding or layering more soil over the original planting level.
The first reason is to prevent the potatoes from being exposed to light and turning green.
The second reason is the with some potato varieties, hilling up can actually increase yields.
You can use soil or straw, or even mulch to hill up.
