This was one of the drawbacks of the stand-alone episodes used back then. If this were a modern story-production Uhura's fate here would have been a major turning point for the character. Yes, using 24th century techniques McCoy could've probably reinstated her technical knowledge and recorded info on her past, but the unrecorded info: her first kiss, the name of her best friend growing up, etc. and all the emotional attachments to those memories would be gone (I could tell you who your parents are or who your fiancé is but they would just be names to you). It would have been interesting to see where such a traumatic and lasting experience like that would've taken her
