I cube beef, then put the cubes on either paper or cloth towels and then cover it, and press gently. The meat caramelizes when you sauté it and seals in the juices, even if you are flouring them. This reminds me of my Grandmother's tarte d'aujord'hui . Whatever she had that day went into the pie. Always plenty of onions and garlic, sometimes rabbit, pigeon or pork, sometimes not. Beautifully presented and baked with care and all ways deliciuos. Best wishes from the French Alps. Beginning to get cold here. I think I shall bake such a pie for my grandchildren when they visit on this weekend. I enjoy your channel very much.

This looks so good! I have a dear, dear friend who lives in Wells, England - she's an excellent cook and baker (so she tells me, lol!). I'm American, I have some mobility issues but I sent her your video and asked if I could make this using a pre-packaged deep dish pie crust and how to prep it for a wet content and also what temp to bake it at and for how long. We don't have 'mushy peas' here so I'll have to fake it. Your meat and potato pie is just beautiful and the work to prep it isn't beyond my ability so I'm looking forward to trying it. Love your channel. And just as a side note - you're lovely!
