Those look SO VERY yummy. I love a good grilled pork steak. I do mine the same way when BBQ'd: rub, grill, then sauce before taking them off the grill.

Why cook yo 180 you must want a dry piece of meat as well as little tough I would suggest bring internal temp to 145 then sear bbq n bring internal temp to 155 juicy flavorful

I noticed you could have just used your Weber griddle insert to sear it is well you should try to see which one creates a better searing crust between the two

No, 180 is a good temp for pork steaks! These aren’t pork chops which are all muscle. Pork steaks have a lot of collagen and fat. So in order to get that stuff to melt away and have a tender bite, you have to take them up to 180 to breakdown the fat! They remind me of pork ribs in a way. Same methods. Enjoy!
I didn’t find it dry at all. Plenty of moisture was present. I’m sure you could finish it at a lower temp. I’ll let you decide how you do it. Thank for watching!

Have you thought about getting a Weber Smokey Mountain to get into some more smoking?
Ya I have! Just have not pulled the trigger on one. I recently bought a por’man grill/smoker but I’m sure the Smokey mountains better.

Good recipe, but whoever sold you those “porksteaks” should be ashamed of themselves! Those cuts look like crap!
