Lava mini chiffon cake & Wrapping:Gluten-free Sweets

- These gluten-free cupcakes are made with rice flour for the chiffon cake and cornstarch for the custard cream.
I filled the fluffy chiffon with plenty of cream and kept the decoration simple.
I also wrapped them in dome cups I bought at a 100-yen store.
Custard cream made with cornstarch tends to become powdery.
Continue heating for 2 minutes after it has thickened to give it a smooth texture.
▷Ingredients(12 min chiffon):
■mini chiffon cake
4 egg yolks
30g vegetable oil
30g milk
1 tsp vanilla extract
70g rice flour or cake flour
4 egg yolks
1 tsp lemon juice
80g sugar
▷How to make:
1. Add sesame oil, milk, vanilla extract, and rice flour to egg yolks, in that order.
Add the lemon juice and 40g sugar to the egg whites and beat until bubbles form. Add another 40g of sugar to make a glossy meringue.
Add about half of the meringue from ② to ① and mix. Add the remaining meringue and mix so that the bubbles do not collapse.
4. Put the chiffon dough into a squeeze bag.
5. Line a muffin tin with glassine paper and squeeze out the batter.
Bake in a preheated oven at 170℃ for 20 to 25 minutes.
7. Remove from the molds and allow to cool.
■Custard cream
2 egg yolks
45g sugar
14g corn starch
200ml milk
1 tsp vanilla extract
200ml heavy cream
10g sugar
powder sugar
▷How to make:
1. Beat egg yolks with sugar and cornstarch in this order.
2. Add milk and vanilla extract and heat over medium heat.
3. Heat until thickened, stirring constantly. When bubbles disappear and the mixture begins to thicken, continue heating for 2 minutes, stirring constantly.
4. Strain the custard cream, cover with plastic wrap, and cool in iced water.
5. Beat the cream with the sugar.
Beat the custard cream until smooth and add the whipped cream. Pour into a piping bag fitted with a clip.
7. Poke a hole in the cooled chiffon cupcake and squeeze a generous amount of custard cream. Sprinkle with powdered sugar.

Thank you for the video and wonderful looking cakes. I have one question. The recipe ingredients call for vegetable oil for the cupcakes but the recipe reads to add sesame oil. Was it forgotten off the list or do you mean just use vegetable oil?

Does all of the lightened pastry cream get used? The 2 liquids equal close to 1 ²/³ cups. I want to make sure it's all going to be used. Pastry cream isn't something you can freeze. Thanks in advance... 👍

I made these and they’re super light and fluffy but they shrank after I opened the oven. I opened the oven door only slightly and let them cool slowly but still they shrank. Any ideas what to do to avoid the shrinking?
Shrank away from the liners or shrank like theirs did in the video? These types of cakes are notorious for shrinkage as well as tasty/smelling like eggs. When it's a cake you can trim the edges but in cupcake form I don't see a way to fix that. Sorry that happened though. I'm sure these were tasty but presentation is just as important. Hopefully you'll get an answer from them... 🤞

Les gâteaux donnent vraiment envie de se mettre à la pâtisserie mais l’emballage, le plastique, le ruban… trop de déchet inutile à l’ère où l’on prône la sobriété pour éviter l’épuisement des ressources naturelles. Certes, c’est joli. Un petit écrin mais vous pouvez faire tellement mieux sans dérivé de pétrole quand on a conscience de toutes leurs conséquences!
Tu forces là. Laisse les gens se faire un petit plaisir... surtout que c'est pas tout les jours et c'est pas ça qui a un impact.
Tu as déjà pris une voiture ? Un train ? Un avion ? C'est de l'ordre de mille à million de fois plus polluants que ses 10 cupcakes avec un petit plastique dessus... Tu utilises RUclips pour regarder cette vidéo et apprécier son petit plaisir visual et gustatif... Garde en tête que les serveurs et data centers sont extrêmement polluants aussi et que ta bande passante c'est du gaz utilisé pour produire de l'électricité et des hydrocarbures de manière générale pour construire l'infrastructure.
On ne retournera pas au monde d'il y a 300 ans. Personne n'en veut. Tout ce qu'on peut faire c'est chercher des alternatives pour la production de l'électricité (et indirectement du pétrole et du gaz) qui te permet de le regarder faire ses cupcake avec 2 gouttes de pétroles pour décorer.
La sobriété au niveau individuel sur des choses aussi petites ne sert a rien quoiqu'en dise le gouvernement français (et c'est d'ailleurs pas le cas ailleurs). Un seul vol en avion consommera plus que toutes les mini économies que toi et toute ta famille réunie vont faire dans ta vie. Ça t'empêche pas d'être conscient de d'essayer de changer certaines habitudes quotidiennes, mais aller jusqu'à culpabiliser les gens pour le moindre petit plaisir occasionnel est hypocrite et objectivement insensé.
Un autre example ton l'hypocrisie qui ne semble pas intentionnelle... Tu veux te mettre à la pâtisserie et copier des recettes sans penser qu'il doit laver 50 ustensiles et récipients et utilise des produits transformés et importés du bout du monde, ce qui est pas très cool pour la Planète(TM)
