    I won't can ever yellow squash, but I plan on trying Old Alabama Gardener's version of canning Squash. The Squash stays firm like Okra like his can for fried Okra. So, I'm going to try that way... see what you think.

    If you like zucchini squash and have a lot then try wb shredded zucchini in pineapple juice. It makes a wonderful zucchini pineapple bread and is yummy! Plus that forgotten shredded zucchini doesn’t turn into a brick in the back of your freezer! Thanks for a great video

    If you add fruit fresh which is citric acid or even a ground up vitamin C tablet your canned goods will not go mushy. :-)

      We did add some. I think part of it was the type apples used.

    I make some of the best New England style baked beans ever! I started making them every Saturday because it's a tradition here in New England and they are sweet there brown with molasses in brown sugar and they are very delicious. If anybody would like some please let me know. I do mine in the slow cooker.

    I did peaches and I had to throw them out. They were awful. I don't know what went wrong. I followed all the directions.

      I'm so sorry to hear that. I wonder if it was just the peaches. I didn't do any thing peach related this year because I could not find any that tasted sweet enough from local chain grocery stores. Most were hard as rocks and sour, like they were picked before they were really ripe even though they looked ripe. The ones I've bought at the farmer's market in the past have always been wonderful. Don't give up on them yet. Try another small batch if you can find some at a farmer's market next year.

    Woohoo! I am so utterly tickled by each and every video I see in this collab. There is so much to learn and be inspired by, thank you for participating!! Edit: Oh yeah, I am not going to do squash either after watching these videos and am also trying to get my canned onions used up quickly. Have only had my pressure canner since May so I have lots to learn and grateful for these video.

      This is a great collaboration and I'm learning a lot from it as well. Yeah, squash is just a mushy mess. The only way I would do it again is if I was given a bunch and had to do something with it quickly. We did like the squash fritters I made with it. Thanks for watching Molly.     Does asparagus get mushy after canned?

      Yes, it will be just like commercial canned asparagus, but without the metallic taste. Hard for it not to be when pressure canned for the required time. If you are wanting crisper home canned asparagus, you need to consider pickling since that is water bath canned and not cooked in the canner for as long as pressure canned variety.       DaelithTN okay thank you for responding. I have only had it oven roasted and love the texture that way. I think I will stay with oven roasting and not try to can asparagus. It just may be one of those vegetables I enjoy in season only. Have a great day!

    With the apples, do you think it was the variety of apples? Some varieties are much firmer than others so maybe they would hold up better to being canned.

      It may have been. This was a canning project I did with a neighbor and she's the one that picked the apples. I'm not even sure what kind they were. But was also the fact that we just don't eat them enough. Thank you for watching.

      I found Gold Rush apples from OH to be wonderful to can. They turn a gold color & aren't mushy.

    My husband and I love canned Black-eyed peas with snaps. You cannot find them with snaps for some reason. The snaps adds another flavor to the peas. We love them better than Pinto Beans. We have them and cornbread as a meal. Not very many people can Purple or Black-eyed peas for some reason. I'm glad you do....

      I can never find the little snaps to add to my peas or I would can them too. Purple hull peas are all I'm able to find in my area, but they are so similar to black-eyed. We eat them with a side of cornbread too. I like to mix my sweet relish to my peas.

      I have not canned sauce with meat. I did can some ground beef once before after this video and did not care for the texture of it. So I did not figure I would like it any better in sauce.

      Thank you for watching, Martha. Unfortunately, no the asparagus does not stay firm. You might have some luck in having it somewhat firm by pickling it since that could be water bath canned instead of pressure canned.

      Nate, check out this book - The Complete Book of Pickling by Jennifer MacKenzie. You will find a variety of relishes and pickles in it that will better suit your taste. You can probably find an inexpensive copy on Ebay or half.com. Or your local library might have it for you to look through first to see if you can find anything you might like to try.       I never said they were unsafe or spoiled in that they would be dangerous to eat. We simply did not like the taste. Why waste food if someone or something else will eat it?

    Great video!!!!! And my hubby is the same way , Soup is not on his list. But when I made my hamberg soup with veggie he loved! LOL Lemon and honey sound great, I plan to make that!! Also peach/strawberry looks good too. Hope you have a great day!

    Kielbasa or any of those sausages are wonderful pickled! Every winter I used to pickle pounds and pounds of kielbasa. It stays good nearly forever and self they do bologna and hot dogs but I found that I like kielbasa better. :-)

    Did your Amaretto-Peach conserve have raisins and pecans in it? I have a lovely recipe that has them and my sis fell in love with it and now my pantry has no more. LOL I will be making a larger batch this month. So fun watching your video!

    OMG you made me remember that disgusting clone of bush baked beans recipe I agree with you there NEVER EVER AGAIN !!! Those were so disgusting . . . my family wants me to can my homemade baked bbq beans I make from scratch here lol Now that honey lemon jelly theres rings bells I remeber watching it & did put it on my to try canning list LOL Great video my dear friend.
