Top tip for the pasta dish: Dont discard all the pasta water, use some of it to toss with the hummus and pasta as the starch in the water will emulsify the oils in the hummus and create a creamier sauce
I'd just like to point out that non of these recipes included tofu, something a lot of people tend to think we eat a lot or too much of, which isn't the case. great recipes!!

Gluten intolerance is more common now because we use different strains of grains now than hundreds of years ago so you're right that a lot of people are gluten intolerant but not everyone had problems with it

I love this video because I would actually eat all of this stuff. A lot of vegan recipes are really intricate and complicated, and since I’m a pretty picky eater I wouldn’t eat those or I would pick out some ingredients...thank you for this! Hummus pasta was great!! So easy and really customisable. I added red pepper, tomato, some almond milk to thin it a tiny bit, and some nutritional yeast 😊
I made the soup and it was really really good. I added some yellow curry powder and garlic and it was soooo good. I also really love the pasta it was really yummy.
I absolutely love the hummus pasta! I just tried it today adding what I add in my kitchen, tomato, spinach, kalamata olives, and parsley. Thank you so much for this idea! I would say this is a great alternative to an Alfredo sauce. Not necessarily taste, but for the texture/creaminess. Love it! ❤️

I love butternut squash soup. We make it often. I'll add in left over cooked carrots with it and season with ginger or curry to change the flavor of the soup. Can make it *creamy* with some milk. Soy, almond, rice etc... Or top with a dallop of plain yogurt or a sour cream alternative all work well too. Especially if you put a bit too much curry or ginger in the soup.
try the spicy beans on grilled bloomer loaf -- best beans-on-toast ever. also, if you're feeling fancy, swap the pizza base for a garlic & coriander flatbread.

I made the hummus pasta today despite low expectations. It was fantastic! I didn't have cherry tomatoes so used a half jar of sundried tomato bruschetta spread. So so good.
Many of my friends wonder how I can afford buying most of my fruits and veggies organic and often regional (which is in some cases also more expensive). The answer is simple: I don't have to buy meat. I spend much less money on my food than my friends, while eating more products with higher quality 🤷🏼♀️😊
Bit of a hack for cutting down on food waste: eat the butternut squash seeds! They are similar in nutritional value to pumpkin seeds, and are just as edible. Same with acorn squash and spaghetti squash! To make them taste better, you can roast them in the oven, or eat them anyway you would pumpkin seeds. :)
Holy heck the pizza looks so good. We have chickpeas in curry sauce at one supermarket so I usually get this and make your version of that chilli. : ) I am so gonna try the pizza, one store just started bringing in free from tesco products to Estonia!!

A tip for the squash soup. When you roast it in the oven, take one pear and cut it in half and put one half in each hole of the squash to roast. Then when cut the pear up and blend it in the soup as well. My mom does this. Squash pear soup is my favorite. Also, you don’t have to peak the skin off. If it’s soft enough, you can just spoon out the squash (like scrape it out) to not have the skin
Lilith Storm yes I actually did! I found I really love making my own vegan pastas with seasonings and veggies I like bc you can make it your own, vegan pizzas from Whole Foods and they’re meatless meatballs are my fave! My body feels so good rn 🥰🥰🥰🥰🥰
That's awesome! Well done 😊 I love making big stews or curries with loads of different veg, spices, beans and rice which is really cheap, tasty and lasts a few days. I went on a whole foods plant based diet about 3 years ago would never go back, I lost excess weight, gained energy and I now feel mentally a lot clearer and happier. I also stopped craving animal products and foods that are bad for me after about 3 months and started enjoying more kinds of veg which I never used to like! Have you looked into the ethical or environmental side of it at all? It really motivated me to stay vegan. At first I kind of didn't want to/didn't care, especially about the ethics but after a couple of months it was easier to think about it with an open mind knowing I was no longer consuming those products.
I was looking for simple quick meals and tried out the hummus pasta. So good, I used lentil noodles and garlic hummus. My son, who is the biggest critic, even loved it, will be a staple in my house from now on.

I’m very very new to having a vegan diet and I’ve found most online recipes to be complicated and discouraging. As a disabled person, I really can’t chop a million vegetables and use three pots and a blender that have to be washed later. This is doable. Thank you :)

And if you look at things by amount of calories you can get per dollar, you'll get far more calories from 10 dollars worth of meat than you will from 10 dollars worth of fruits or veggies. I hear people say veganism is cheaper, but I find the opposite to be true, especially if you want to maintain your weight or gain weight. The only way veganism is cheaper is if you eat less, which actually tends to Happen naturally because plant based foods are generally not very calories dense. Also, the price of plant based milks is ridiculous. I spend about 35% more on plant based milks than I would on cow milk.
i was an example of a carnivore. i was somewhere between t-rex and caveman. but i try to live meat free or even vegan more and more often. you are a big help and an inspiration. thank you for sharing this.
@calamitasCorvusPersonally I dont think hummous sauce or roasted butternut are bland but you could add more Alliums, herbs or Tomato Puree & she did suggest adding spices. Spice it up man! Please leave us the recipe here.
I love to make butternut squash soup (curry spice really brings it to the next level) and it freezes really well. I'll put any left overs into portion sized containers and then you can just pull one and put it in the fridge or counter to thaw and reheat it

I tried the butternutaquash recipe and it was sooo god! If you want to make it a bit better however, i’d recomend puting garlic, carot and coconut milk in the aswell!! Haven’t tried the other recipes but I deffinetly will!
OMW this has just become the best pasta dish I have ever tasted. I dry fried the tomatoes with baby spinach just enough to heat the veg through. Delicious ! Now I'll have to try the other recipes.
Vegan pesto is also great on a pizza! Especially with artichoke hearts, olives, mushrooms and chilli flakes. It can be a bit difficult to spread so I mix it with olive oil to make it easier
I’ve only been completely vegan for about a week now, and you’ve helped my transition immensely. I had been surviving eating mainly cereal with almond milk (still love it), but as a person who’s always loved to cook, you really opened my eyes to all the options out there for vegan recipes. it was great seeing a recipe that included things I already had. I’ve only tried the hummus pasta so far (which tasted AMAZING with the seasonings I put in), but I’m definitely going to try all of the others. thank you so much :) ❤️

Using Naan breads are also an easy and cheap alternative to a pizza base. (The herb flavoured ones are always the best)
Or you can easily make them with plant based yogurt and flour

A tip for the squash soup. When you roast it in the oven, take one pear and cut it in half and put one half in each hole of the squash to roast. Then when cut the pear up and blend it in the soup as well. My mom does this. Squash pear soup is my favorite. Also, you don’t have to peak the skin off. If it’s soft enough, you can just spoon out the squash (like scrape it out) to not have the skin

Lilith Storm yes I actually did! I found I really love making my own vegan pastas with seasonings and veggies I like bc you can make it your own, vegan pizzas from Whole Foods and they’re meatless meatballs are my fave! My body feels so good rn 🥰🥰🥰🥰🥰

I love making big stews or curries with loads of different veg, spices, beans and rice which is really cheap, tasty and lasts a few days.
I went on a whole foods plant based diet about 3 years ago would never go back, I lost excess weight, gained energy and I now feel mentally a lot clearer and happier. I also stopped craving animal products and foods that are bad for me after about 3 months and started enjoying more kinds of veg which I never used to like!
Have you looked into the ethical or environmental side of it at all? It really motivated me to stay vegan. At first I kind of didn't want to/didn't care, especially about the ethics but after a couple of months it was easier to think about it with an open mind knowing I was no longer consuming those products.
I was looking for simple quick meals and tried out the hummus pasta. So good, I used lentil noodles and garlic hummus. My son, who is the biggest critic, even loved it, will be a staple in my house from now on.

Pro tip for the chips; boil them in water with a teaspoon of baking soda for 10 mins before putting in the oven. It will make the outsides crispier!

Adalya I agree! I‘ve even seen them in EDEKA for 2,50 € a piece, they can be sooo expensive here. I read in another comment that she gets them that cheap in 4 packs from Aldi, maybe they have them like that here, too 🙈

I’m very very new to having a vegan diet and I’ve found most online recipes to be complicated and discouraging. As a disabled person, I really can’t chop a million vegetables and use three pots and a blender that have to be washed later. This is doable. Thank you :)

Veganism isn‘t cheaper than a 1$ mcdonalds bruger.Meat is not pricey enough thats the problem with the animal industry.Ppl eat way too much meat these days.

And if you look at things by amount of calories you can get per dollar, you'll get far more calories from 10 dollars worth of meat than you will from 10 dollars worth of fruits or veggies. I hear people say veganism is cheaper, but I find the opposite to be true, especially if you want to maintain your weight or gain weight. The only way veganism is cheaper is if you eat less, which actually tends to Happen naturally because plant based foods are generally not very calories dense.
Also, the price of plant based milks is ridiculous. I spend about 35% more on plant based milks than I would on cow milk.

@calamitasCorvusPersonally I dont think hummous sauce or roasted butternut are bland but you could add more Alliums, herbs or Tomato Puree & she did suggest adding spices. Spice it up man! Please leave us the recipe here.

I love to make butternut squash soup (curry spice really brings it to the next level) and it freezes really well. I'll put any left overs into portion sized containers and then you can just pull one and put it in the fridge or counter to thaw and reheat it

I tried the butternutaquash recipe and it was sooo god! If you want to make it a bit better however, i’d recomend puting garlic, carot and coconut milk in the aswell!! Haven’t tried the other recipes but I deffinetly will!

OMW this has just become the best pasta dish I have ever tasted. I dry fried the tomatoes with baby spinach just enough to heat the veg through. Delicious ! Now I'll have to try the other recipes.

Vegan pesto is also great on a pizza! Especially with artichoke hearts, olives, mushrooms and chilli flakes. It can be a bit difficult to spread so I mix it with olive oil to make it easier

I’ve only been completely vegan for about a week now, and you’ve helped my transition immensely. I had been surviving eating mainly cereal with almond milk (still love it), but as a person who’s always loved to cook, you really opened my eyes to all the options out there for vegan recipes. it was great seeing a recipe that included things I already had.
